Sri Lankan Fried Kovakkai (Ivy Gourd)

Ingredients

* 500 g kovakkai (ivy gourd), sliced into thin rounds
* 1 onion, sliced
* 2–3 green chilies, sliced
* 1 tsp curry powder
* Salt to taste
* 2 tbsp oil

Method

1. Wash the kovakkai and slice into thin rounds.
2. Add the curry powder and salt to the kovakkai. Mix well and gently massage the seasoning into the slices.
3. Slice the onions and green chilies, then season them with a little salt and curry powder.
4. Heat the oil in a frying pan over medium heat.
5. Add the seasoned kovakkai and fry for 6–7 minutes, stirring occasionally.
6. Add the seasoned onions and green chilies to the pan.
7. Continue cooking for another 5 minutes, or until the vegetables are tender and lightly browned.
8. Remove from the heat and serve hot with warm rice.
