Forget banana bread. This is what your sad brown bananas actually deserve. 🀎🍌

Banana Bundt Cake with Brown Butter Glaze

Wet Ingredients:
* 3 large VERY ripe bananas (the ugly almost-black ones)
* 1 cup full-fat sour cream
* 1 1/2 cups golden sugar (or brown sugar)
* 3 large eggs (room temp)
* 2 tsp vanilla extract
* 1 cup unsalted butter

Dry Ingredients:
* 2 1/4 cups all-purpose flour
* 1 tsp baking soda
* 1/2 tsp baking powder
* 1 tsp salt
* 1 tsp cinnamon

Instructions:

- Preheat oven to 325Β°F.
- Grease your bundt pan REALLY well.
(Butter every crevice + light flour dusting, or baking spray.)
- Brown the butter then remove from heat and let cool 10–15 mins so it doesn’t scramble the eggs
- Mash bananas.
- Add:
* sour cream
* eggs
* Vanilla
- Whisk until smooth.
- In another bowl combine sugar and butter
- Add:
* flour
* baking soda
* baking powder
* salt
* cinnamon
- Add dry ingredients into wet. Fold until JUST combined. Do not overmix.
- Pour into prepared bundt pan. Tap gently on counter.
- Bake 55–70 minutes. Start checking around 55 mins. A toothpick should come out with moist crumbs, not wet batter.
- Let cool in pan 20–25 mins.
- Cool mostly before glazing.

Brown Butter Glaze

Ingredients
* 4 tbsp unsalted butter
* 1- 1 1/2 cups icing sugar
* 2–4 tbsp of cream (or more if needed)
* 1 tsp vanilla
* pinch of salt

Instructions
- Brown the butter same way as above.
- Let cool slightly.
- Whisk in:
* icing sugar
* vanilla
* salt
* milk/cream, a little at a time until pourable but thick
Pour over cake.

Let it drip dramatically because that’s the point.

These classic stuffed peppers are one of my go-to comfort food dinners. Ground meat, rice, onion and garlic stuffed into red bell peppers and simmered in tomato sauce until everything is tender and flavourful.

Simple ingredients. High protein. Feeds the whole family and makes the best leftovers.

Ingredients
β€’ 5–6 large red peppers
β€’ 0.75 kg ground meat (I used pork/veal/beef mix but you can use all beef or pork)
β€’ ΒΎ cup basmati rice, rinsed
β€’ 1 egg
β€’ 1 yellow onion, chopped and sautΓ©ed
β€’ ~1 tbsp garlic powder
β€’ Salt & pepper to taste
β€’ 1 jar strained tomatoes
β€’ 3 cups chicken broth

Instructions

1. Slice the tops off the peppers and remove the seeds. Keep the tops to place back on.
2. SautΓ© the onion until soft.
3. In a large bowl, mix ground meat, rinsed rice, egg, sautΓ©ed onion, garlic powder, salt, and pepper.
4. Fill each pepper with the mixture and place the tops back on.
5. Stand them upright in a large pot. Pour in the strained tomatoes and chicken broth (liquid should come most of the way up the peppers).
6. Bring to a boil, then reduce to a simmer, cover, and cook for 3–4 hours until tender and cooked through.
7. Spoon the sauce over top when serving.
