You'll see fresh eggplant on our table at the this coming week. Ever wonder what to do with it? Do you love lasagna? Or maybe chicken parm?

This mouth-watering dish is eggplant parmesan, and it is a comfort food that is sure to please whomever sits around your table.

Our kids came back for seconds tonight!! It's filling and satisfying. I'll have the recipe available along with the eggplant and basil to make it yourself on Tuesday at the market.

Did you know that you can use beet greens in any recipe that calls for spinach? They are so tasty! We love them sautéed with our scrambled eggs, as a pesto or even in a hot cheese dip!😋😋
