Last night I cooked up a 2 kg steelhead trout. With some of the leftovers this morning I made toast with a little leftover tartar sauce couple of 3 ounces of steelhead trout and two eggs topped with Parmesan cheese. I’ve been looking to boost my protein intake at breakfast time; this is one way.

I received my first box of vegetables from the Odd Bunch folks. It came with an eggplant and a recipe for stuffed eggplant. I went and grabbed a couple more because the Mexican ones are in season right now and cheap. These are not unlike basic stuffed peppers and turned out great.

One of my favourite recipes.
Just making up the spice mixture now, and I'll post pics later.

Nigella Chilli
Ingredients
Chili:
• 4 tablespoons olive oil
• 4 onions, finely chopped
• 2 cloves garlic, minced
• 2 teaspoons dried or crushed chili flakes
• 2 teaspoons ground coriander
• 2 teaspoons ground cumin
• 5 cardamom pods, bruised
• 2 red peppers, seeded and finely diced
• 2 cans canned chopped tomatoes
• 1/2 cup tomato puree
• 1 cup water
• 2 tablespoons cocoa
• 1 cup canned red kidney beans
• 1 cup lentils
• 1 cup chickpeas
• 1 lb ground beef seasoned with Nigella's spice mix

8-12 count grilled Jumbo prawns on a bed of zucchini zoodles with orange peppers onions and garlic slathered with a homemade Parmesan Alfredo sauce and topped with more Parmesan and fresh basil.
Now I’ve been on a diet for 89 days and I’m gonna celebrate and treat myself to a piece of cheesecake after this. Whoohoo!!!

Spinach and Herb 5 Cheese Torta. This is my take on a fabulous Nigella recipe. She uses pie crust and also does a variation with a potato chip crust. I make mine with a cauliflower crust, which not only lowers the carb count but bumps up the protein count. Super nutritious meal. I'll drop Nigella's recipe in the comments just to give you an idea where I started from.
