One-Pot Chicken and Rice 🍗🍚
Get ready for a delicious and easy meal that cooks all in one pot, making cleanup a breeze!
Ingredients:
1 lb boneless, skinless chicken thighs
1 tbsp olive oil
1 small onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 cup long-grain white rice
1 ½ cups chicken broth
1 tsp paprika
1 tsp dried oregano
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
1. Brown Chicken: In a large pot, heat olive oil over medium-high heat. Add chicken thighs and cook until browned on both sides. Remove chicken and set aside.
2. Saute Veggies: In the same pot, add onion, bell pepper, and garlic. Cook until softened.
3. Add Rice and Spices: Stir in rice, paprika, oregano, salt, and pepper. Cook for a minute to toast the rice and spices.
4. Simmer: Pour in chicken broth and bring to a simmer. Place the chicken on top of the rice mixture.
5. Cook: Cover the pot with a lid and reduce heat to low. Let it simmer for about 20 minutes or until the rice is cooked and the chicken is tender.
6. Serve: Garnish with fresh parsley and serve hot. Enjoy this flavorful one-pot meal with tender chicken and perfectly cooked rice!
