This gyuto is one of my recent favourites! But you’ll have to wait to get your hands on it, because it’s going with me to .austria in October!

The lower heel height (54mm) is something that I haven’t done in a long while on a gyuto and it’s something I’ll for sure have to do more of!
Also two very stunning pieces of mulga and masur birch for the handle!

Progression from forged to hardened.

1. The 4 bl@des as forged and touchmark stamped.

2. Annealed, normalised and then sandblasted.

3. Cold forged under the power hammer with the new dies. To smoothen the surface and refine the geometry.

4. Pre-heat treatment profile ground.

5. Tang step filed in, date and steel specifications stamped in the tang.

6. Clay applied for the heat treatment.

7. All 4 bl@des quenched, tempered and minor warps straightened.

8. The kurouchi is missing in a few spots, but it’s along the edge on all the bl@des so it won’t be a problem.

Onto grinding and polishing 👋

The new shop location Is opening tomorrow! So I of course have to bring something along with me for the opening!

This nakiri will be for sale in person at Tetogi tomorrow, April. 18th. 10:00-17:00.

Specs:

Bl@de: 203mm x 63mm

Steel: 135cr3 & clean wrought iron san-mai

Bevels: Stone ground bevels finished on an Umegahata.

Distal taper: 6,1mm - 1,8mm - 0,8mm (at the tip)

Handle: Rokkaku Han Maru handle in Brazilian rosewood reclaimed from old furniture (supplied by Tetogi) and olive wood. (Hot glue mounted “friction fit”)

Weight: 224g
