My own homemade Garam Masala Mixed with (Sweet paprika)Kashmiri dry chilli powder as for colour.

First of all, Preparing Body of Masala with recently toasted Cumin seeds, 1/4 of toasted Black Cumin seeds and generous amout of Toasted Corriender Seeds
Then for Earthy Smell ( Khusubu) add Black cardamom, Green Cardamom, Cinnamon stick or Bark, Dry Ginger, Mace, Bay leaves and black pippermint that all toasted.
For Fruit and flora Arome, add Cloves, nutmeg, Mence, Star Anis, Anis, Fennel Seeds all toasted
For colour grind toasted Kashmiri chilli or sweet chilli that does not have hot spiciness. You can add turmeric powder if colour of the same converted into yellowish colour as well as turmeric is powerful anti-oxidante and anti- inflamatory property agent inherrited.
Grind all ingredients very finely and mix all to get as picture down. Add just a little bit salt and Store air- tight container for longer use.

Energy ball: Non-Glutine Laddu made of with toasted (White) millet and (Purple) Maiz with dried fruits and sugarcane jaggery. Kasar is Nepalese version made with toasted rice flour ocasionally eaten in marriage Ceremony. It can be made of with lentles.

Preparation of Sumac/Bhakimlo: Sumac (Rhus Coriria and Rhus chinesis that found in Nepal) is tremendously useful plant and it is mainly used in culinary purposes as flavourful dressing spicies, bevarages; juice and lemonade. It is used as dye and tanning agents for leather and clothes. It is also used in Chinese traditional medicine and Ayurvedic medicine. And the most of Arabian and mediterranean countries use Sumac in place of other they use lemon/lime or veneagars. I use it as in Chatni and Sichuan papper and chilli Souces with mango powder as for sour and tangy taste and preservative agent in order creat favourable environment for fermentation process; the adequate habitat for beneficial bacterias like lactobacillus found in Chatni and Kimchi.

Prepation of Homemade Jimbu; fermented dried scallion. It is used as in culinary for tempering/soutering of Dal/ lentiles with ghee/ clarify butter that give you very peculiar aroma, as well as for medicinal purposes i.e. to cure cold and coughing. In Nepal it is made from Himalayan high altitude wild-grown herbs Allium Hypsistum and Allium przewalskianum but I made with the similar herbs found in European Continental: Allium Schoenoprasum i.e. the species of fine scallion.

कति गाह्रो, नयॉ सन्तानहरुका लागि आफ्नो सम्पूर्ण जिउ डाल विभत्ष बनाउँछ, पार्छ । निँउरिदै झुक्दै र फुक्दै टन टन र तान तान झै गरि तन्नाक्कै तन्किएका हॉगहरु बँगा टिंगा भै सक्दा पनि केहि परबह र मतलब राख्दैऩ ा मेरी जुम्ल्हीहरुको घ्याम्पे आमा तथा सन्तानलाई ९ महिना आफ्नो कोखमा राख्ने सँसारभरिका आमाको र आफु भव्न्दा १० गुण भारीले थिचिइ्एको उ त्यों बगैचको नासपति फलको रूखको हॉगको कथा, पिडा एउटै छ। ऐ नढॉटिकन भन त कान्छा उ त्यो हंगामा कति गोटी गेडी होला!?

Mustard green or Mustard leaf it’s Nepalese name is Rayo Sag. The botanical name of Rayo is Brassica Juncea. There are some glimpses of Production of Rayo in organic and sustainable manner and ways. In the Middle of field you can observe how beautiful is that heap of Lombricompost / home and food-beverage store of those human allied friends; Earthworms feed by the rests of juicy fruits and vegetables peeling, root and leaves only coming from our own home garbage selection as organic materials, providing us nice earthworm humus are so smooth and finnest compost are very nutritive food for green green healthy vegetable that finally we harvest. Yes so soft and tenderness. We hardly dig/plough our field because there are thousands of splendid batallions of earthworms soldier troops are deploying and working together everywhere under the ground very silencely and peacefully days and night without rest and fatigue never never stopping to process and make our field more fertile, perfect crumble, unstitched, hollowed, humid and so soft. As well as they keep our field clean and without odor smell as the field remain without prejudicial bacterias harmful for soil environment and ecosystem . Really the Earthworm are our authentic thanksgiving friends contributing our mountain amount sound health. What a wonderful; unique and spectacular criature that living together very very close to you and your door-steps that mankind no need to go other planet with mega expedition budget in search of extraterrestrial creatures. Mustard Green; Rayo Saag in Nepalese name is very popular and yummy green vegetable in Nepal served with plain Rice or Dal Bhat. The botanical name of Rayo is Brassica Juncea. Here are some glimpses of photographs of Rayo harvested organically in our garden in the Basque Country, Spain. This vegetable has tremendous Heathy properties listed as follows: Abundance Antioxidant and Anti-inflammatory agents such as Vitamins C, E, K and Omega3 fatty acids preventing heart and cardiovascular diseases ,arthritis and cancers, help to detoxification, Calcium and potassium found in Rayo fostering bone health, dietary fiber improve digestion metabolism, help lungs and Asma patient, weight loss and improve mental health etc. Green Leaves and tenderness stems are eaten as green vegetable meanwhile fermented into air tight mud Crock or wooden pot posteriorly dried for long time storage and provision. The process and the final product with very peculiar arome and taste that we get called Gundruk used as fried veg, soup as well as for pickling purposes. Fine omega 3 fatty acid oil can be extracted from seed collection.
