La taille, une étape fondamentale qui consiste à couper une partie des sarments (tiges ou branches ligneuses grimpantes de la vigne) pour réguler la croissance, favoriser la maturation des fruits, faciliter les travaux viticoles ultérieurs et maintenir une structure équilibrée de la vigne.
Pendant ce travail hivernal, on sélectionne les sarments qui seront coupés en fonction de leur vigueur, de leur position sur la vigne et de leur âge. Les sarments les plus faibles ou mal placés sont souvent supprimés, tandis que les sarments vigoureux et bien situés sont conservés pour assurer la croissance et la fructification de la vigne.

Pruning, a fundamental step which consists of cutting part of the shoots (stem or climbing woody branch of the vine) to regulate growth, promote fruit ripening, facilitate subsequent viticultural work and maintain a balanced structure of the vine.
During this winter work, we select the branches which will be cut according to their vigor, their position on the vine and their age. The weakest or poorly placed branches are often removed, while the vigorous and well-located branches are preserved to ensure the growth and fruiting of the vine.
