I gave my 3 yr old udon noodles and edamame beans (both big hitters for her) and prawns (hasn’t liked them for the last 18 months or so). I gave her bowl to her and she said ‘ohhhh, I only wanted prawns’ 🤷‍♀️

Don’t worry, she ate 1 prawn and 3 noodles and declared herself done.

My dinner was a bit more of a grown up fusion noodle soup - prawns, mushrooms, edamame beans, samphire, coconut milk and plenty of garlic and ginger and coriander.

The big food shop is coming tomorrow so this evening’s dinner was a fridge clearer! Fortunately I had halloumi at the back of the cheese shelf so I started with that.

Fried it up until just on the black side of golden (my daughter needed a wee during this crucial stage of the cooking) then added red onion and leek (the only fresh veg left in my fridge).

I poured in a carton of passata with garlic plus some water, mixed herbs, salt, pepper and sugar and simmered for a bit.

Then added these mezzelune stuffed with pesto that I bought in Aldi a little while back. I couldn’t be bothered dirtying another pot and boiling water so I cooked them straight in the sauce.

Result - delicious! Will make again!

We spent the weekend in Carreglefn, Anglesey, and while there bought some incredible fresh duck eggs. We came back today...

We spent the weekend in Carreglefn, Anglesey, and while there bought some incredible fresh duck eggs. We came back today and Michael challenged me to make a dinner that highlighted the duck eggs…without buying anything new.

Fortunately I had a chorizo ring in the fridge! I decided to devil the duck eggs with a mix of mayo, Dijon mustard, chives, green olives and smoked paprika. I whipped up a quick chorizo and pea risotto to go underneath.

It worked SO well! Creamy, powerful (I added a drizzle of chilli oil to my portion too) and just what I fancied. Plus all made with ingredients I had in the house (plus those duck eggs!)
