BBQ Beef Chili Recipe for Bonfire Night
Ingredients:
2 lbs ground beef
1 medium onion, chopped
2-3 cloves garlic, minced
2 bell peppers (any colour), chopped
1 can (14 oz) diced tomatoes
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon smoked paprika
1 teaspoon salt (adjust to taste)
Black pepper to taste
Optional toppings: shredded cheese, sour cream, chopped green onions, coriander
Instructions:
1. Prep the Grill: Preheat your BBQ to medium-high heat.
2. Cook the Beef: In a large skillet or grill-safe pot, brown the ground beef over the grill until fully cooked, breaking it up into small pieces as it cooks. Drain excess fat.
3. SautΓ© Vegetables: Add chopped onions, garlic, and bell peppers to the beef in the skillet. SautΓ© for 5-7 minutes until the vegetables are softened.
4. Mix in Spices: Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for another minute to release the flavours
5. Add Other Ingredients: Mix in the diced tomatoes (with juice), kidney beans, and black beans. Stir well to combine.
6. Simmer on the BBQ: Reduce the heat and let the chili simmer on the BBQ, covered, for about 30-40 minutes. Stir occasionally. You can also place the skillet on a cooler part of the grill if you prefer a slow cook.
7. Serve Hot: Once the chili is heated through and flavours have melded, remove from the grill. Serve hot with your favourite toppings.
