An earlier batch of tablet didn’t quite turn out as expected but it gave me the chance to make these. These giant chocolate cookies have a caramel centre and they’re loaded with chocolate chips. They’re pretty huge though so you might want to share one with a pal!

I’ve been experimenting with Scottish tablet recipes this week and this latest batch is pretty delicious. There’s nothing else quite like tablet. It’s such a unique texture and it kind of just melts away. It’s so lovely to enjoy a piece with a cup of tea but I’m also imagining how tablet can be incorporated into other things… tablet ice cream, tablet cheesecake or perhaps simply using a piece to adorn a caramel muffin or cupcake. Decisions decisions…

As you know, I love an honesty box. We discovered this one recently on the beautiful Isle of Gigha. It had everything a wandering cyclist, hiker or camper could need. There were fresh loaves, tablet, caramel shortbread, scones and even some of Katie Morag’s ‘Porridgies’. There were also some beautiful hand-knitted hats made from Argyle wool. What a find!
