Maple Sausage Waffle Breakfast Platter
Ingredients:
1 pound breakfast sausage (patties or links)
1/2 cup maple syrup, plus more for serving
1 tablespoon butter, melted
1 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
2 large eggs
1/4 cup vegetable oil (for waffle iron, if needed)
Fresh fruit (berries, sliced bananas), for serving
Powdered sugar, for dusting (optional)
Directions:
1. Cook the sausage: In a large skillet over medium heat, cook the breakfast sausage according to package directions until browned and cooked through. If using links, you can slice them in half lengthwise after cooking for easier serving. Drain any excess grease. Keep warm.
2. Prepare the waffle batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3. In a separate medium bowl, whisk together the milk, eggs, and melted butter.
4. Pour the wet ingredients into the dry ingredients and mix until just combined. A few lumps are okay; do not overmix.
5. Cook the waffles: Preheat your waffle iron according to the manufacturer's instructions. Lightly brush with vegetable oil if your waffle iron isn't non-stick.
6. Pour about 1/2 to 3/4 cup of batter onto the hot waffle iron (or as much as recommended by your waffle iron's instructions) and cook until golden brown and crisp, usually 3-5 minutes.
7. Keep cooked waffles warm in a 200°F oven while you cook the remaining batter.
8. Assemble the platter: Arrange the cooked waffles and sausage on a large platter. Drizzle the 1/2 cup of maple syrup over the sausage. Serve with fresh fruit and an extra side of maple syrup. Dust with powdered sugar, if desired.
