Maple Sausage Waffle Breakfast Platter

Maple Sausage Waffle Breakfast Platter

Ingredients:
1 pound breakfast sausage (patties or links)
1/2 cup maple syrup, plus more for serving
1 tablespoon butter, melted
1 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
2 large eggs
1/4 cup vegetable oil (for waffle iron, if needed)
Fresh fruit (berries, sliced bananas), for serving
Powdered sugar, for dusting (optional)

Directions:
1. Cook the sausage: In a large skillet over medium heat, cook the breakfast sausage according to package directions until browned and cooked through. If using links, you can slice them in half lengthwise after cooking for easier serving. Drain any excess grease. Keep warm.
2. Prepare the waffle batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3. In a separate medium bowl, whisk together the milk, eggs, and melted butter.
4. Pour the wet ingredients into the dry ingredients and mix until just combined. A few lumps are okay; do not overmix.
5. Cook the waffles: Preheat your waffle iron according to the manufacturer's instructions. Lightly brush with vegetable oil if your waffle iron isn't non-stick.
6. Pour about 1/2 to 3/4 cup of batter onto the hot waffle iron (or as much as recommended by your waffle iron's instructions) and cook until golden brown and crisp, usually 3-5 minutes.
7. Keep cooked waffles warm in a 200°F oven while you cook the remaining batter.
8. Assemble the platter: Arrange the cooked waffles and sausage on a large platter. Drizzle the 1/2 cup of maple syrup over the sausage. Serve with fresh fruit and an extra side of maple syrup. Dust with powdered sugar, if desired.

Cheesy Eggs & Sausage Breakfast Skillet

Cheesy Eggs & Sausage Breakfast Skillet

Ingredients:
1 pound breakfast sausage (pork or turkey)
6 large eggs
1/2 cup milk
1 cup shredded cheddar cheese, divided
1/4 cup chopped green onions, for garnish (optional)
Salt and freshly ground black pepper, to taste
1 tablespoon olive oil (if sausage is lean and sticks)

Directions:
1. In a large, oven-safe skillet (preferably cast iron), cook the breakfast sausage over medium heat, breaking it up with a spoon, until browned and cooked through. Drain any excess grease. If your sausage is very lean, you might want to add a tablespoon of olive oil to the pan before adding the sausage to prevent sticking.
2. While the sausage is cooking, in a medium bowl, whisk together the eggs, milk, a pinch of salt, and a pinch of black pepper until well combined.
3. Once the sausage is cooked and drained, sprinkle about 3/4 cup of the shredded cheddar cheese evenly over the sausage in the skillet.
4. Pour the egg mixture over the cheese and sausage. Do not stir.
5. Reduce the heat to low, cover the skillet, and cook for 8-10 minutes, or until the eggs are mostly set but still a little wet on top.
6. Remove the skillet from the heat. Sprinkle the remaining 1/4 cup of shredded cheddar cheese over the top of the eggs. If you like, you can place the skillet under a preheated broiler for 1-2 minutes, just until the cheese is melted and bubbly, watching carefully to prevent burning.
7. Garnish with chopped green onions, if desired, and serve immediately straight from the skillet. Enjoy!

2 tablespoons fresh parsley, chopped
Salt and freshly ground black pepper to taste

Sausage, Eggs & Crispy Breakfast Potatoes

Ingredients:
1 pound breakfast sausage (patties or links)
2 large russet potatoes, peeled and diced into 1/2-inch cubes
1/4 cup olive oil
1/2 teaspoon paprika (optional, for color)
Salt and freshly ground black pepper to taste
6 large eggs
1/4 cup milk or cream (optional, for scrambled eggs)
2 tablespoons butter
Fresh parsley, chopped (for garnish, optional)

4. Prepare the eggs: In a medium bowl, whisk the eggs with milk or cream (if using), salt, and pepper until well combined.
5. Cook the eggs: In the skillet where you cooked the sausage (or a clean one), melt the butter over medium-low heat. Pour in the egg mixture. Cook, stirring gently with a spatula, until the eggs are set to your desired doneness (scrambled, fried, etc.).
6. Serve: Divide the crispy potatoes, cooked sausage, and eggs among plates. Garnish with fresh parsley if desired. Serve immediately.

French Toast Breakfast Feast

Ingredients:
1 loaf challah bread or brioche, sliced about 3/4-inch thick
6 large eggs
1 cup milk (whole milk or 2% works great)
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional, but so good!)
2 tablespoons unsalted butter, for cooking
Maple syrup, fresh berries, powdered sugar, or whipped cream for serving

Directions:
1. In a shallow dish or pie plate, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and nutmeg (if using) until well combined.
2. Heat a large non-stick skillet or griddle over medium heat. Add about 1 tablespoon of butter and let it melt and coat the surface.
3. Dip each slice of bread into the egg mixture, allowing it to soak for about 15-20 seconds per side. Don't let it get too soggy, or it will fall apart.
4. Carefully place the soaked bread slices onto the hot skillet. Cook for 3-4 minutes per side, or until golden brown and cooked through.
5. You may need to add more butter to the skillet between batches. Keep cooked French toast warm on a baking sheet in a low oven (around 200°F) while you finish the rest.
6. Serve immediately with your favorite toppings like maple syrup, fresh berries, a dusting of powdered sugar, or a dollop of whipped cream. Enjoy your delicious breakfast feast!

1 large egg
2 tablespoons unsalted butter, melted, plus more for greasing the griddle

1 tablespoon olive oil (optional)

6 large eggs
1/4 cup milk or cream
