Speedy harvest today because quite frankly the garden was overstimulating 😅

Purple and yellow speckled French beans that are genuinely too pretty to eat (but I will). Five beetroots, then a bunch of volunteer tomatoes, then another bunch. Costoluto tomatoes being enjoyed by something that is not me (more on that soon). Sungold tomatoes that are so pretty I ate one straight off the plant and I regret nothing.

A cucumber situation that is frankly out of control. A plant that has toppled over entirely. There is a lot going on. I started letting the beans dry on the plant for seed saving next year, which felt very grown up of me. The rest is going to my salsa class, which feels like exactly the right thing to do with a chaotic glut harvest.

For the salad 🥗:
Half white cabbage
Carrots
Red peppers
Tofu, shaved thin (frozen and thawed beforehand for best texture)
Egg noodles, chopped

For the tofu marinade 🫙:
Onion powder
Chinese five spice
Soy sauce
Garlic infused olive oil

For the peanut butter dressing 🫟:
1.5 tbsp peanut butter powder
4 tbsp soy sauce
1 tbsp honey
1 tbsp Apple cider vinegar
1 tsp Sesame oil
1 tsp Fish sauce
1 tsp Ginger paste
Handful of salted peanuts, to serve

I should have been a cucumber farmer 🥒
Let a few of these go slightly further than planned. By which I mean one of them is bigger than my head. And my head is a bit big. How did this happen.

When cucumbers go too far gone you start to see yellowing, so if yours are looking a little golden around the edges that is your sign to get in there immediately. These were still healthy enough to eat, just absolutely enormous, and I have more cucumbers than I know what to do with right now.

I tried one straight off the vine, warm from the sun, and I am going to sound like I work for Big Veg but it tasted genuinely sweet and really good. The only thing throwing me off was eating a room temperature cucumber, which felt deeply wrong and yet was not.
What am I doing being a software engineer. This is clearly my calling 😂

Millennials rarely do things by halves, and I say that as one of them. The slow living movement swept a lot of us up and suddenly people were leaving cities, buying plots, planning to grow everything from scratch. I did a version of it too.

Nearly two years in, here is what I will tell you: I had a slower, more intentional approach to life when I was in the city with a few containers in a shared garden that got barely any light than I do now. Because out here, the urgency is real. The ducks need feeding, there is another heatwave, there is a hosepipe ban, and you still have a 9 to 5. Who told you to grow your own tomatoes from scratch on a Tuesday night? Genuinely, who?

The countryside dream often puts us as the author of every single step. And that is a lot of steps.
What I actually think is this: you can have that intentionality right where you are. Being more conscious of where you shop, choosing an independent brand, buying local where you can. That is not a compromise. That is a lifestyle. I lived it and it was good.

I am not saying do not move to the countryside. I am saying the countryside life is more accessible than you think, and you do not have to uproot everything to have elements of it.

(Also I made a blueberry vanilla matcha latte and it was quite nice 🫐)
