Calendula officinalis. or pot marigold is an easily grown hardy annual with ornamental, edible and medicinal value. The name marigold derives from Marys gold, the Mary in question being the virgin Mary. Calendula derives from Calende that recognises the long flowering period of the plant. Officinalis recognises the medicinal value of the plant as it was sold by apothecaries - the same source as the word 'office'. Seeds can be sown outdoors in a sunny spot and raked into the soil where they will germinate readily and give a bright display. The petals can be added to provide colour and flavour to salads and can be used as a natural food colouring.
