Next we have Sabah Spinach (also known as Egyptian Spinach). Imagine this: 8000 years ago, the Egyptian Pharaoh was sick and so he asked for a bowl of hot soup. His chefs served up a delicious green soup made from Molokhiya (also known as Egyptian Spinach), garlic, and cilantro. He liked it so much that he asked to have it every day – and voila the Pharaoh was cured! This is the origin story of Egypt’s national dish: the Molokhiya soup. While the story might be somewhat of an exaggeration, the health benefits of Molokhiya are not.

Baba is the hero of this month’s box. He also goes by Broad or Fava Beans. Baba has been grown in abundance along the Nile for millennia. He was here long before he spread to Europe where he acquired his name. In fact, traces of fava bean has been found in tombs of the Ancient Egyptians. Fava beans was perceived by many Ancient Egyptians to have magical properties – and once you see how quickly they can grow you will understand why. If the story about ‘Jack and the bean stalk’ is really true – there is a good chance that Jack would have been Egyptian.

This month we are travelling from the sun-kissed land of the Greek gods to... the sun-kissed land of older gods. Welcome to Egypt! What do you imagine when you think of it? Can you see the pyramids towering over Cairo? A desert cut in two by the Nile? Or maybe you’re back at a relaxing holiday at an all-inclusive in Sharm-El-Sheikh. Finally we have Christo Cress. He is also known as Greek Cress ‘Olympus’. This delicious green has a sweet, nutlike flavour with a hint of peppery spice! The dried seed pods of Greek cress can also be enjoyed. The seeds provide a more potent pepperish taste.
 
Greek cress grows fast and compactly. Seeds can be grown at any time of the year when indoors. From planting to harvesting you’ll wait only 20 to 30 days! It grows in moist variable soils.
 
Greek cress ‘Olympus’ is even spicier than other varieties. It also tends to resist bolting during hot weather. This cress is ideal for succession planting and seeds can be sown every 10 to 14 days. The plant is ready to harvest when it reaches 3 to 4 inches tall.

Next up we have Maria Marjoram. Marjoram is full-bodied aromatic perennial herb that makes a lovely addition to salads and savoury dishes. It goes well with vegetable casseroles, stews, omelets, and tomato-based recipes. Its attractive leaves can be used both dried or fresh and makes a healing medicinal tea. Marjoram is similar to oregano but has a much milder personality.

It is an absolute pleasure to introduce you to the star of the Greek box - Leonidas Lettuce. He also goes by Cos Lettuce. Cos lettuce takes its name from the Greek island of Cos and is also known as romaine lettuce.

This tasty salad green features long slender leaves with a thick centre rib. Cos is a sweet tasting lettuce with considerable crunch. This lettuce is most often used in Caesar salads. Of course, you can use it as a sandwich topper too. It pairs well with avocado, parmesan cheese, and pepper for seasoning.

In August we are also growing Min Red Streaked Mizuna mustard lettuce. This peppery mustard green is sure to fire up any meal. Its ruffled edges and variegated colour make it an appetizing treat. In spring and summer, the leaves are green and red. As the colder months approach, it takes on purplish tones.

It is a multi-season lettuce and can be sown spring through fall. You can expect your first harvest within 20 to 45 days. It is a fast grower and tolerates the heat well. Mature leaves have the most flavour.

In August we will also meet Gwen Green Onions also known as spring onions, scallions, and Chinese chives. Green onions are such a simple and easy-to-use herb. They go well with nearly any savoury dish. They have a gentler, more delicate flavour than bulb onions and go with everything. They can spice up a salad, omelette or they can be sautéed in butter for a truly divine flavour that accompanies pasta and casseroles well.

Green onions are a no-fuss, hardy root vegetable. Once they get started, they will grow fast. You can pull them up by the root when mature and add them to your favourite dish. Alternatively, you can leave the root ball within the soil and simply snip off the greenery you will use. The green shoots will regrow thereafter and in no time at all. In this way, you can have green onions that last you all summer long.

Firstly I’m pleased to introduce Pay Pak Choi. This Chinese native is also known in the west as bok choy or Chinese cabbage. Pak choi is a non-heading vegetable that features large leaves with crisp centre ridges topped with generous soft leaf lobes. All parts of the plant are edible, including its yellow flowers.

This wonderful vegetable is a main staple within Chinese cuisine. It has a flavour similar to spinach. Pak choi goes well in soups, stir-fries, noodles, and salads, of course. It pairs well with garlic, ginger, lemon, and a splash of soy sauce!
