A wonderful lunch today. I had frozen grated cauliflower, added some veggies and sautéed for 6-8 minutes. This dish is for 1 person, and I took the time to calculate calories and protein (also other nutrients but I will tell you only this 2 as many people is worried about them when diet is based on plants. You don’t have to!): 190.15 Kcal and 10.53g protein. There is also a good amount of vitamin K and acid folic, and many other great nutrients!
➡️ Ingredients
150g frozen grated cauliflower
80g frozen peas
100g asparagus (weight after taken off the bottoms)
2 tbsp chopped red pepper
2 tbsp chopped spring onions
2 garlic cloves, crushed
1/2 tbsp tamari sauce
1/2 tbsp olive oil
1/2 tsp ground turmeric
10 tweaks of black pepper
A splash of water (very little)
Some drops of lemon juice to serve
➡️ Method
Put everything together in a pan and sauté for 5 minutes then put the lid on and let cook on low heat for another 5 minutes. Serve and add lemon.

One of my favourite fruits but I don’t buy it often (too many “food miles”) only as a treat maximum twice a year. I had it frequently when I was young when living in Venezuela. A really nice breakfast with a last minute homemade granola (oats, almonds, pumpkin seeds, ground flaxseeds, tahini, date syrup, 8 minutes in the air fryer), and Greek style soy yoghurt. So good!!

Crispy outside, melting inside. That’s how I got these tofu cubes, and they were amazing! I soaked firm tofu cubes in water with a bit of baking soda for 10 minutes. Then drain and take excess liquid with a towel. Mix corn starch with salt, sweet smoked paprika, turmeric and pepper. Cook in the air fryer for 10-12 minutes previously spraying the cubes with some oil. That’s it. Served with: rocket leaves with lemon juice and walnuts, tomatoes, a glob of homemade hummus, and a slice of whole wheat and rye sourdough bread. Will you try it? Texture is incredible!

Nothing special but improvising a meal, which was very tasty!
➡️ Potato and green bean salad: steamed potatoes and green beans. They are dressed while still hot, with apple cider vinegar, extra virgin olive oil, chives, and salt. Eaten cold.
➡️ Butter beans with Lebanese 7 spices: a 400g tin of unsalted butter beans. After sautéing some onion and garlic, drained beans are added, 1 tbsp of the 7 spices, salt, and spinach, with a bit of water, stirring until spinach is wilted.
➡️ Avocado is served with lemon juice and chives.

This meal is not very photogenic but it is delicious!

Some lunch ideas for this heat wave! ⬇️⬇️

1.- Potatoes, beetroots, kidney beans, green peas, courgettes, celery, cavolo nero, spring onions, red peppers, garlic, rocket leaves, apple cider vinegar, Extra Virgin olive oil, salt, pepper. On top: smoked organic tofu. Potatoes, green peas, and courgettes cooked and cooled. Beets were bought already cooked.

2.- Matcha soba noodles with asparagus with a simple dressing of sesame oil, vegan Worcestershire sauce, ginger, garlic, spring onions, coriander leaves, salt and toasted black sesame seeds. Also I included some slices of smoked organic tofu on a bed of rocket leaves with lime juice and some red pepper slices on top. Noodles and asparagus cooked and cooled with cold water.

3.- Buckwheat and chickpea salad, with spring onions, peppers, garlic, mint leaves, coriander leaves, apple cider vinegar, extra virgin olive oil, and salt. Buckwheat was cooked and cooled for the salad.

4.- Chickpeas, pickled red cabbage and whole wheat giant couscous, with a simple dressing of apple cider vinegar and EVOO. Also spring onions, radishes and coriander leaves. Couscous cooked and cooled.

A glorious weather ☀️☀️☀️ finally! This complete meal (or complete salad because it is served cold) is all you need these days.
➡️ Ingredients and method (6 servings)
• 200g tempeh (cubed into small pieces, then coated with 1 tbsp tamari sauce, 1 tsp date syrup, 1/2 tsp garlic granules, 1/2 tsp smoked sweet paprika, 1/2 tsp ground ginger, 1 tsp neutral oil - then air fried for 15 minutes at 200°C, stirring occasionally)
• 400g tin cannellini, drained : 240g
• 150g small pasta, I used gnocchetti sardi. Cook according to instructions and cool it with cold water immediately when draining.
• 2 large carrots (cooked and then cut into medium to small pieces)
• 1 broccoli (steamed and then cut into pieces)
• 1 cucumber, chopped
• 4 tomatoes, chopped

Combine all the above ingredients. Then proceed with the dressing:
• 1 avocado
• A handful of mint leaves
• A handful of parsley leaves
• A handful of chives (or spring onions)
• 4 tbsp unsweetened soy yoghurt
• The juice of 2 lemons
• About 1/2 cup of water (you start with a bit less)
• 1 tsp extra virgin olive oil
• About 1/2 to 3/4 tsp salt, or to taste.

Blend the ingredients for the dressing and then pour over the previous mix, combining well and adding black sesame seeds to finish the dish.

When you need a really quick meal that is delicious, healthy (no strange ingredients), and high in protein… the express range tick all the boxes!
1. Cauldron Express Oregano and Thyme Grillable Tofu. I made a delicious sandwich: homemade hummus, avocado, a slaw, a some slices of this tofu after being in the air fryer for 5 minutes (200°C)
2. Cauldron Express Smoky BBQ Grillable Tofu: slices were stir fried with vegetables, perfect with arepas!
3. Cauldron Express Teriyaki Marinated Tofu Pieces: the pieces are stir fried with peppers, cavolo nero, carrots and a slurry with corn starch and soy sauce over rice. Yummy!
4. Cauldron Express Garlic & Ginger Marinated Tofu Pieces: another stir fry with the tofu pieces, mangetout, carrots, and sesame seeds over rice. My favourite!

So easy, you can use just one arm 🤣 (but it’s true!). Glass noodles, which you just need soak in boiling water for 3 minutes. Add vegan furikake. Soft tofu, add tamari sauce, sesame seeds and spring onions. Steamed pak Choi to complete the mail, and squeeze half lemon on it.
It’s so good!
