Research shows that the body isn’t able to process refined sugars, and actually uses up vital vitamins and minerals when trying to do so. d towards foods with a purpose, foods that have positive benefits for the body in addition to giving us energy. I have a sweet tooth and I created The Conscientious Cook in response to my own personal quest for nutrient-rich yet appetising sweet treats. It all began in my kitchen where I started experimenting with alternative ways to sweeten foods. Rice malt syrup, raw honey, date syrup and maple syrup quickly became my star ingredients, giving the sweetness I wanted, while delivering valuable nutrients to the body. I have used natural ingredients to create a range of cakes, snacks and treats - extensively taste-tested on my friends and family - which are both delicious and virtuous. Each guilt-free recipe uses the best ingredients in their most natural state. We avoid all refined ingredients, especially sugar, replacing them with seasonal, organic food, ancient grains, raw and super foods that all have amazing and beneficial effects on the mind and body. My chosen selection, some of which are inspired by classic recipes and some of which are my favourites all have delicious healthy ingredients that are valuable to your body. They have a positive nutritional benefit, not empty-calorie quick fixes that actually deplete your energy resources and can be detrimental to overall health. Perfect for dinner parties, lunch boxes, tea-time snacks and sugar high-free children’s birthdays, most freeze well, many are portable for a nutritious snack on the go and all are scrumptious and good for you.

I hear this so often: “But I already eat really healthily.”

And you probably do.

Working with me isn’t necessarily about completely changing the way you eat. Often, it’s about looking more closely at whether the way you’re eating is actually giving your body what it needs.

Are you getting enough protein? Enough fibre? Enough plant diversity and essential fats? Are your meals balanced? Are you eating enough?

Could the timing or combination of your foods be working harder for you?

Sometimes it’s the relatively small adjustments that make the biggest difference.

If you feel you’re doing everything “right” but still don’t feel quite as good as you think you should, perhaps it’s time to look a little deeper.

Looks impressive. Secretly SO easy. 🍎✨

This Apple & Cinnamon Frangipane Tart is exactly the kind of dessert I love, beautiful enough for a dinner party, but incredibly simple to make.

Crisp golden pastry, creamy almond frangipani, thinly sliced apples, warming cinnamon and a glossy honey glaze… autumn on a plate. 🍂

And there’s some nutritional goodness tucked in there too. Apples bring fibre and protective plant compounds, while almonds provide healthy fats, vitamin E, magnesium and a little protein. Because eating well should absolutely include delicious desserts too.

The best bit? I use ready-made gluten-free puff pastry, so it looks far more complicated than it actually is.

There are some client messages that stop you in your tracks, and this was one of them.

When we first started working together, Bianca was already incredibly conscious about food and health. What we worked on wasn’t a “diet”, but understanding what her body needed — how to combine foods, where the gaps were and how small, realistic changes could support her overall health and wellbeing.

Two years later, hearing how she feels is incredibly rewarding.

This is what Culinary Medicine is about for me: taking nutritional science and translating it into delicious, practical food that works for you and your life.

This might just be your new favourite high-protein lunch… 👀

My Smoked Salmon & Cottage Cheese Frittata is ridiculously easy to make, packed with protein and omega-3s, and tastes just as good cold the next day — making it perfect for work lunches.

🐟 Omega-3-rich salmon
🥚 Protein-packed eggs
🌿 Fresh dill + spring onions
🥣 Creamy cottage cheese
🌰 Ground almonds for fibre + healthy fats

Just mix, pour and bake — that’s pretty much it.

Serve with a big green salad and you’ve got a delicious, balanced meal that will keep you satisfied for hours.

September might just be the BEST month to eat seasonally… 💚🍐🎃

It’s that gorgeous moment when summer produce is still going strong and the autumn harvest starts arriving — meaning our kitchens are bursting with colour, flavour and nourishment.

🍇 Damsons, blackberries, figs, pears & plums bring plenty of fibre and protective plant compounds to support our gut microbiome.

🥬 Chard, cabbage, fennel & leafy greens are packed with vitamins, minerals and antioxidants.

🥒 Courgettes, French beans, runner beans & summer squash keep a little bit of summer on our plates while adding even more plant diversity.

🎃 And then comes butternut squash — sweet, comforting and packed with beta-carotene, just as we start heading into the cooler months.

And this is why I LOVE eating with the seasons. You naturally get more variety, more plants and more fibre, exactly what our gut microbes love. 🌱

After a summer of holidays, late nights and perhaps a little too much rosé 😉, September feels like the perfect time to refocus, embrace a little more routine and nourish ourselves for the season ahead.

🥞 High-protein pancakes in 5 minutes — save this one!

The perfect breakfast for lazy summer mornings, hungry kids and those slightly squishy bananas sitting in the fruit bowl. 🍌

Made with oats, eggs, banana and cottage cheese, these pancakes are naturally sweet, fluffy and packed with protein and fibre — helping to keep everyone satisfied until lunchtime.

And the best bit? Everything goes straight into the blender, so they genuinely take minutes to make.
Pile them high and add your favourite toppings — berries, poached stone fruit, yoghurt, chopped nuts or a little drizzle of maple syrup. 🍓🍑
