Very pleased with my last and final synoptic of the year and college too. We had to present 4 dishes in 5 hours with 30 minute prep time. I was very worried as my previous attempts of certain things didn't go well and feel I couldn't get all four out in the time given. However, I didn't stop and managed to do it with amazing results:

Florentines: DISTINCTION
"Excellent texture, balance of fruit and nuts. Good even, and shaped all the same"

Sachertorte: DISTINCTION
"Excellent texture. Good amount of glace, good amount of apricot"

Danish Pastries: DISTINCTION
"Good shape and texture, shaping. Very good, excellent flavour"

Baked Alsaska: DISTINCTION
"Excellent plating and colours. Parfait well made with excellent flavour"

Overall Grade: DISTINCTIONNNNNNNNN

This is my first time in my three years in college I have got ALL DISTINCTIONS in an exam. For my other practicals I got all distinctions again apart from one merit. Definitely a really good end to college.

I'm not very skilled in making soufflés however quite proud of these ones. I was worried that they wouldn't rise and cook properly but they turned out really good.

Entremet: Layers of Jaconde Sponge and Cherry And Coconut Mousse With A Milk Chocolate Glaze With Chantilly Cream, Dark Chocolate Pieces And White Chocolate Drizzle

Overall Grade: DISTINCTION

Very surprised with this grade as I wasn't confident with how I did things. However, I was wrong. Had a slight hiccup with the plating up but manged to find a way to resurrect my mistakes. My layers compliment each other well as the cherry is stronger than the coconut hence why the difference on the layers.
