Trying to think of cooling salads and sides to share with you for your BBQ this weekend!

Kachumber Salad recipe:

Pre-preparation time: 5-7 mins
Cooking time: 5 mins
Serves: 4

Ingredients
One red onion, chopped into small pieces
One salad tomato chopped
3/4 cucumber, peeled and chopped into cube
Juice of half a lemon
A small bunch of coriander leaves, chopped
Salt as per taste
Pinch of red chilli powder (optional)
½ Amchur powder, dried mango powder

Method

Add the chopped onion, tomato and cucumber in a salad or mixing bowl and add the salt, red chilli and amchur powder and lemon juice and toss it. Add the coriander leaves and give it another mix.
Served chilled.

Today is not simply about cooking a sweet dish. It is about celebrating the rich food heritage of South Asia and sharing a story through food."

That was the message I shared with the contestants at the first heat of Mela Chef by Worcester Mela, and they certainly delivered.

Today, 10 talented students from Heart of Worcestershire College created South Asian heritage -inspired sweet dishes, showcasing creativity, technical skill and a genuine appreciation for the stories behind the food.

From family traditions to modern interpretations, each dish reflected the rich diversity of South Asian culinary heritage.

Alongside Lucy from Bar Limón, and Jack Williams, Chef lecturer, I had the pleasure of judging the competition. The standard was exceptionally high, making our decisions incredibly difficult.

Congratulations to the 6 contestants who have progressed to Heat 2 on 30 June. We are excited to see what they create next as they move one step closer to the final on 18 July.

A huge thank you to Riaz and Katy and the whole team at Worcester Mela for this incredible event and well done to every student who took part.

Mela Chef is about much more than competition. It is about celebrating culture, building confidence and inspiring the next generation through food.

Matar Paneer recipe is here - matar is the Hindi name for garden peas. Paneer as some of the Indian cheese lovers would know it as soft, milky non-melting cheese found in the cheese aisles at super-markets.

Let’s get cooking!

Ingredients

- 1 cup garden peas (frozen are fine)
- 250 gm paneer, cut into cubes
- 2 tablespoon oil
- 1 tablespoon butter
- 1 teaspoon cumin seeds
- 1 medium onion, chopped
- 1 red/green chilli chopped (optional- omit if you like mild curry)
- 1 in ginger, chopped
- 4 garlic cloves , chopped
- 2-3 tomatoes, chopped or 200 g of chopped tomatoes
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 2 teaspoons coriander powder
- 1 teaspoon dried mango powder
- Salt to taste
- ½ teaspoon garam masala powder
- 1 teaspoon dried fenugreek leaves
- Handful of chopped fresh coriander
- 5-6 ginger julienne

Method
* Heat oil and butter in a nonstick pan.
* Once hot, add cumin seeds.
* Once they start to sizzle, add the onion and sauté till dark golden brown.
* Add green chillies, ginger and garlic and continue to sauté until raw smell of garlic vanishes.
* Powder the heat, and add turmeric powder, dried mango powder, red chilli powder and coriander powder and mix well.
* Add tomatoes, mix well and fry on medium heat until oil separates.
* Add green peas and mix well.
* Add cheese and mix with lightly are cook for a few minutes. Add salt, upto 1 cup warm water and mix well and cook for 4-5 minutes.
* Add dried fenugreek leaves and mix well.
* Garnish with garam masala powder, ginger julienne and fresh coriander leaves
* Serve
