New to Kamado cooking? Here are 5 tips to get you started.

1. Choose lumpwood charcoal over briquettes. Briquettes tend to clog the fire grate and ventilation holes, hindering airflow and temperature control during cooking.

2. Don’t use too much charcoal. Overfilling your Kamado with charcoal can restrict airflow, making it harder to control the temperature and leading to uneven heat.

3. Wait for clean blue smoke before you start cooking. Thick white smoke usually means the charcoal is still settling and can leave food with a harsh, bitter flavour. Give your Kamado a little time to burn clean before adding anything to the grill.

4. Avoid opening the lid too often. Every time you lift it, heat escapes and the temperature can fluctuate, which can increase cooking time. Use a probe thermometer where possible, and when you do open the lid, remember to burp your Kamado first by opening it slightly before lifting it.

5. Keep your Kamado clean. Built-up ash, grease and residue can restrict airflow, making temperate control more difficult and affecting how evenly your food cooks. Regularly clear out the ash, clean the deflector plate and give the grill a deeper clean every so often.

Master these five basics and you’ll be well on your way to getting the most out of your Kamado 🔥

What a weekend!🔥

Things don’t quite go to plan after Smoke & Fire Festival was unexpectedly cancelled, but thanks to the brilliant team at Smokey Rebel , the weekend wasn’t a complete washout.

A last minute change of plans saw us heading to Country Calling with Cai Ap Bryn , bringing along one of our Fuji Kamados and firing it up for the occasion.

We kept things simple, cooking up a few samples over charcoal and pairing them with Smokey Rebel seasonings for festival-goers to try … a small taste of what the Fuji can do 🔥

A huge thank you to Cai Ap Bryn for getting us involved at such short notice, and of course to Smokey Rebel for helping make it happen 👏

Not the weekend we originally planned, but a good one nonetheless 🔥
