Spring may be here, and thoughts turn to lighter food, but this Halloumi and Green bean salad is a year-round favourite in this house. With baby potatoes, green beans, cherry tomatoes, olives, capers, dill, mint, a tangy dressing and the lovely squeaky halloumi, this is a filling dish, and the recipe makes a good bowlful for two.
