The humble celery root - or celeriac, as it’s known - is a much-overlooked vegetable. It may not be the prettiest, but it has a fabulous flavour. A great way to bring out even more flavour with celeriac is to roast it, which creates a crisp exterior and soft interior.

The vegetable makes a lovely side dish for roast meats (try it with your Sunday dinner) and is a beautiful base vegetable for a soup or in a vegetable curry.

You can roast celery root in either olive oil (don’t use your best extra virgin for this) vegetable or duck or goose fat—instructions are included in the recipe (in the comments below.

Old-Fashioned Apple Charlotte

The Charlotte is a traditional English pudding that seems to have fallen off the radar in recent years which is hard to understand as it really is a lovely pudding. What’s not to like about few days old bread slathered in melted butter, filled with stewed apples, then baked?

Spring may be here, and thoughts turn to lighter food, but this Halloumi and Green bean salad is a year-round favourite in this house. With baby potatoes, green beans, cherry tomatoes, olives, capers, dill, mint, a tangy dressing and the lovely squeaky halloumi, this is a filling dish, and the recipe makes a good bowlful for two. My favourite halloumi is made here in Yorkshire by , and you can read more about it in my recipe in my bio. The recipe is also in my book, More Than Yorkshire Puddings.
