What a great breakfast choice.

Putting aside the fact that some marketing guru decided to insert their religion into my grocery shopping, the label said all the right things -- Reasonable calorie count. Low Carbs. No Sugar, High in Potassium, Fiber and Protein, full of texture and ... DELICIOUS!

This is how I put it together:
~1 slice of Ezekiel Bread, toasted
~Scoop of half a very small local avocado smashed on the tossed bread
~1/8th seedless cucumber, diced
~4 small cherry tomatoes, diced
~1 tablespoon red onion, diced
~1 teaspoon olive oil
~splash of red wine vinegar -- omit the salt if you need to
~pinch of salt and freshly ground black pepper

I mixed the vegetables with the oil and vinegar and spread it on top of the avocado. A sprinkle of salt and pepper and that was breakfast.

It's splurge. Even in the US it is a pricey loaf of packaged bread, so here it's ridiculously expensive, but to keep me from falling off the rails and digging into regular bread and risking going back on insulin, this is a worthwhile splurge to add bread into my culinary repertoire.

My new Spiralizer is a great way to add variety and texture to everyday meals. No real recipe if you use bottled marinara sauce. I made my own using canned tomatoes. With the tomatoes I can get in the market here, canned tomatoes are a better choice. It's important to drain the "noodles" as well as you can. As you see in the the finished dish photo, there is some liquid pooling. The zucchini continues to release water, but not enough to ruin the dish.
