Ingredient :}

( For the dough )
2 cups all-purpose flour (maida)
4 tbsp ghee (clarified butter)
½ cup water (approx., for kneading)

( For the filling )
1 cup khoya (mawa), grated
½ cup powdered sugar
2 tbsp chopped almonds
2 tbsp chopped cashews
1 tbsp raisins
2 tbsp desiccated coconut
½ tsp cardamom powder

( For frying )
Ghee or oil (for deep frying)

Classic Masala Chai (1–2 cups)

Ingredients -}

1 cup water
1 cup milk (whole is classic, but any works)
2 tsp black tea leaves (Assam is the GOAT)
2–3 tsp sugar (adjust to taste)

Spices (crush lightly) -}

2 green cardamom pods
1 small cinnamon stick
2–3 cloves
4–5 black peppercorns
½ inch fresh ginger (sliced or grated)

How to make it -}

Boil the water + spices + ginger
Let it bubble for 5–7 minutes until it smells incredible and the water darkens.
Add tea leaves
Simmer 1–2 minutes. Don’t overdo it unless you like bitterness.
Add milk + sugar
Bring to a gentle boil. Let it rise once or twice (the dramatic chai moment).
Simmer 2–3 minutes, then turn off heat.
Strain and serve hot.
Sip. Exhale. Life is slightly better now.

Here’s a traditional Kashmiri Noon Chai (Pink Tea) recipe 🌸It’s salty, creamy, and usually enjoyed with bread or naan.

Ingredients (2–3 cups)
2 cups water
1½ tbsp Kashmiri green tea leaves (or gunpowder green tea)
¼ tsp baking soda
2 cups cold water (for shocking the tea)
1–2 cups milk (to taste)
Salt, to taste (usually ½–¾ tsp)
Optional garnish: crushed almonds or pistachios

Method
Boil the tea
In a pot, add 2 cups water, tea leaves, and baking soda.
Boil on medium-high heat for 20–30 minutes, stirring occasionally.
The liquid will reduce and turn deep reddish-brown.
Develop the pink color
Add 2 cups cold water and whisk or stir vigorously.
The tea will foam and change to a pinkish hue.
Add milk
Add milk and bring to a gentle boil.
Adjust milk quantity depending on how light or rich you want it.
Season
Add salt and simmer for 5–10 minutes.
Taste and adjust salt.
Strain & serve
Strain into cups.
Garnish with nuts if desired.

{ Tips for Perfect Pink Color }
Use hard water if possible.
Whisking or “pulling” the tea helps activate the color.
Longer boiling = better color and flavor.

🧀 Crispy Paneer Kirkire

Ingredients
• Paneer – 200–250 g (cut into fingers or cubes)
• Cornflour – 2 tbsp
• All-purpose flour (maida) – 2 tbsp
• Rice flour – 1 tbsp (for extra crispiness)
• Ginger-garlic paste – 1 tsp
• Red chilli powder – 1 tsp
• Black pepper powder – ½ tsp
• Chaat masala – 1 tsp
• Garam masala – ½ tsp
• Salt – to taste
• Water – as needed (for batter)
• Oil – for deep frying
• Optional for extra crunch:
• Crushed cornflakes or breadcrumbs – ½ chup

Method }

Prepare the paneer
Lightly pat dry the paneer pieces to remove excess moisture.
Make the batter
In a bowl, mix cornflour, maida, rice flour, ginger-garlic paste, red chilli powder, pepper, garam masala, salt, and water.
Make a thick, lump-free batter (not runny).
Coat the paneer
Dip paneer pieces into the batter.
Roll them in crushed cornflakes/breadcrumbs for extra crunch (optional but recommended).
Fry
Heat oil on medium flame.
Fry paneer pieces until golden brown and crispy, turning occasionally.
Remove and drain on tissue paper.
Final touch
Sprinkle chaat masala on top.
🍽️ Serving Suggestions
Serve hot with mint chutney, schezwan sauce, or tomato ketchup
Add sliced onions & lemon wedges for street-style raste

🔥 Tips for Extra Kurkure
Use cold paneer for better texture
Don’t overcrowd the pan while frying
Rice flour + cornflakes = maximum crunchy

Here’s a simple and tasty Tomato Chutney (Tomato Chatni) recipe that goes well with idli, dosa, chapati, or rice 🍅🌶️

Ingredients

• 3–4 ripe tomatoes (chopped)

• 1 onion (chopped) – optional

• 2–3 dried red chilies (adjust to taste)

• 2 cloves garlic

• 1 small piece ginger (optional)

• 1 tbsp oil

• Salt to taste

• ½ tsp sugar or jaggery (optional)

• ½ tsp tamarind pulp (optional)

For Tempering (Tadka)

• 1 tsp oil

• ½ tsp mustard seeds

• ½ tsp urad dal

• A few curry leaves

• Pinch of hing (asafoetida)

Method

• Cook the chutney

• Heat 1 tbsp oil in a pan.

• Add red chilies, garlic, ginger, and onion. Sauté till onion turns soft.

• Add chopped tomatoes and salt.

• Cook until tomatoes turn soft and oil starts separating.

• Add sugar/jaggery and tamarind (if using). Mix well.

• Grind

• Let the mixture cool slightly.

• Grind to a smooth or coarse paste (add little water if needed).

• Tempering

• Heat oil in a small pan.

• Add mustard seeds, urad dal, curry leaves, and hing.

• Once they splutter, pour over the chutney.

• Serve

• Mix well and serve fresh.

Tips

• For spicy chutney, add green chilies.

• For no-onion version, skip onion and add extra garlic.

• Tastes best fresh but can be refrigerated for 1–2 days.

Simple Vegetable Soup
(serves ~4)

Ingredients

• 2 tbsp oil or butter

• 1 onion, chopped

• 1 cup chopped tomatoes (fresh or canned)

• 4 cups water or vegetable broth

Instructions:

1/2 cup rolled oats

1/2 cup flour

1/3 cup brown sugar

1/3 cup butter, melted

Instructions :-》

Preheat oven to 350°F (175°C).

Toss apples with lemon juice, sugar, and cinnamon. Spread in a baking dish.

Mix oats, flour, brown sugar, and butter until crumbly.

Sprinkle crumble on top and bake 35–40 minutes until golden.
