Chicken Stew is a healthy recipe for all kind of age groups from children to elder people. It also works as an effective medicine to sick and weak people. In winter it is a very common dish in Bengali households to keep the body warm. Also in the time of season changes, when we are very much p**n to cold and cough, Chicken stew will be a wonderful option to have in dinner or breakfast along with some pieces of bread toast. The dish is prepared in minimum amount of oil. Also the slow cooking process infuses the goodness of chicken and vegetables into the broth. A dollop of butter is enough to fulfill the requirement of fat in the body. It is a perfect combination of protein, carbohydrate and fat. Inspite of using very little amount of spices, the dish is super tasty and extremely flavourful.

‘Easy Peasy Pasta’ is the recipe when pasta can be done in a jiffy still makes all happy. Whenever I am not in a slightest of mood to prepare a full-fledged dinner, I opt for this Easy Peasy one. Simply boil the noodles and fry it with vegetables. Add some herbs, scrambled egg and cheese to lift the taste of the dish. If you are not eggetarian, happily skip the egg part. Critics can raise their eyebrows, but I love this Easy Peasy Pasta.

Among different type of noodles for the pasta, I prefer macaroni which cook a bit faster than other variants. You can use any type of your choice. This dish is ideal for breakfast also.

It has been raining cats and dogs for the past few days which is not quite usual in Delhi. We are virtually confined in room as many areas around are water logged. Only way to cherish this weather is to buy fresh Ilish aka Hilsa fish from the market. Although now a days getting fresh Hilsa is next to impossible. However, we Bengalis can’t spend the rainy season without buying Hilsa.

Normally ‘Khichuri and Ilish mach (Hilsa fish) bhaja’ combo are symbolic to the wet weather in Bengal. But I thought to go a bit different and prepared ‘Ilish Pulao’. The flavour of Hilsa fish infused in rice, while cooking in ‘dum’, make the dish heavenly tasteful. Do try this one dish meal and enjoy the rainy season.

I was dabbling with the idea of preparing something interesting with fish for a while. As luck would have it, the other day I found a couple of Bhola Bhetki fishes (Indian Jewfish) lying in the market which looked pretty fresh and reignited the desire. Not really suitable for making into pieces and preparing fish curry, they were ideal for baking. Baked fishes, marinated with limited spices and herbs have always been a favourite. In fact, I have tried baked Salmon earlier and also shared in this blog. I also added a few vegetables like potato, carrots and green beans to make it a complete meal. A matter of 45 minutes or so and the fish in the oven turned golden with light, flavourful juicy gravy. It also took me few years back and reminded me of a delicious recipe of baked sea fish which I happened to try in the city square of Spilt, a beautiful island in Croatia, while it was raining heavily. Considering the humid weather right now, to avoid the heat of the kitchen, baking would be a perfect and relaxing idea to make a healthy meal. Try this out.

I generally need no special reason for baking a cake as I usually love to bake. However, it has been quite a long I didn’t bake anything. Keeping the chocolate cake in my mind I started looking for something different recipe. Also, I wanted a recipe which doesn’t need any frosting. My search ended up with an easy recipe of “Chocolate & Yogurt Loaf”. The slices of this super moist chocolate cake are equally enjoyable in breakfast or as an evening snack or a dessert.

Paratha in breakfast is quite common in my home. Sometime it is a plain paratha with sabji or sometime with different stuffings. Today’s recipe is of protein packed ‘Paneer paratha’. Though ‘Paneer’ or cottage cheese is readily available in the market, one can prepare it at home (link). Grated paneer mixed with spices and herbs makes a delicious stuffing for parathas. ‘Kochu Shak’ or Taro Stem is quite a popular vegetable among Bengalis. Taro stems are considered a super food due to their rich nutritional profile. They contain essential vitamins (like Vitamin A,B,C,D and K), protein and minerals.

We can relish this simple vegetable in both veg and non-veg way. In veg version black chickpeas or grated coconut is added to enhance the taste. However, in rainy season when Hilsha fishes are found abundant in the market, the fish head is combined with the vegetable to prepare a delicious dish. Do check the recipe.

Black plum (Indian Blackberry) or Kala Jamun aka Jam is hardly abundant throughout the year and you can find it mainly during the monsoon months, that too for few days in between. Although I am not a big fan of Jamun, must admit that it has an interesting taste swinging between sweet and sour sans the slight bitterness. Moreover, it has plenty of health benefits as well, like fights against diabetes, improves digestion, helps in weight loss etc.

I learnt the recipe of black plum juice from my mother-in-law who surprised me once with the thick rich tasty juice which I liked immediately. And I never thought the jamuns can be turned into such a delicious and kicking drink. Which attracts me most is the vibrant colour of the juice. A bit of effort needed to squeeze the juice out of the fruits which is worthy given the outcome. Try and get surprised.

Visiting the history is equally exciting as innovation in cooking. From time to time, one should try to dig out the recipes which earned the love of people from a different era which has not weathered a bit till present. It reflects on the success stories behind these recipes. Being a fan of Mughlai Dishes, it was always thrilling to try out them in my kitchen. This time it was the famous Mutton Nihari, which rekindles the memory of Lucknow to my mind. I visited the city in 2017 and immersed myself to the beauty of Awadhi cuisine. It was in that trip, I tried along with other delicacies, Nihari and liked it instantly. The stew based dish was a silent killer indeed.

We must be quite familiar with the sweet from Bengal, called Sandesh. It is usually prepared from ‘chena’ or cottage cheese and often given different flavours with date palm jaggery, chocolate, mango, strawberry etc. Today my recipe is about Aam Sandesh aka mango flavoured sandesh. Throughout the summer this yellow coloured sweet attracts extra attention in sweet shops of Bengal. A perfect blend of fresh mango puree and homemade fresh cheese is a treat to your sweet tooth. It is a double treat if you love both mangoes and Sandesh.

Variety of mangoes are available here in Delhi from April till mid of August like Alphonso, Kesar, Langra, Chausa, Dasheri etc. However, I found Chausa and Dasheri being the sweetest and in my current recipe for Aam Sandesh, I used Chausa mango.

Bael fruit is widely available mainly in Summer. It contains a greenish yellow, wood-like outer shell and orange, sweet inner flesh. This fruit is native to Indian Subcontinent and Southeast Asia. Scientifically known as “Aegle Marmelos”, it has got different names like Bengal Quinch, Golden Apple, Wood Apple, Stone Apple, Japanese Bitter Orange etc. The Bael tree is considered sacred by both Hindus and Buddhists.

Beal fruit juice is a perfect summer cooler and has lots of health benefits. It is a good toxin reliever, enriched in anti-inflammatory properties, rich in hemoglobin, prevents constipation, treats peptic ulcers, boosts metabolism. It is a powerhouse of nutrients and also good for skin and hair. In Delhi, one can find aplenty Bael fruit juice stalls across the road for fatigued pedestrians, particularly in the scorching summer. It is so relieving and keep you cool in the soaring summer.

Today I am sharing two types of Bael juice recipe. One with curd and other with milk. My personal favorite is Bael juice with curd. Do let me know which one you like most. One can also make the juice simply with water.
