📋 Ingredients

🛢 Oil – 2 tbsp
🧅 Onion – 1 medium (sliced)
🧄 Ginger Garlic Paste – 2 tbsp

🌿 Whole Spices
• Cloves – 4–5
• Green Cardamom – 4
• Black Cardamom – 1
• Cumin Seeds – 1 tsp

🥣 Curd – ½ cup

🌿 Aromatic Spices
• Cinnamon – 1 small stick
• Mace – little
• Nutmeg – a pinch

🥕 Mixed Vegetables
• Green Peas – ½ cup
• Cauliflower – 1 cup
• Beans – ½ cup
• Potato – 1 medium
• Carrot – 1 medium
• Capsicum – ½ cup

🧂 Salt – to taste
🍚 Basmati Rice – 1½ cups (soaked 20–30 minutes)
💧 Water – 2 cups
🌸 Kewra Water – few drops
🎨 Orange Food Colour – a pinch (optional)



📝 Method

1️⃣ Heat oil in a cooker and add sliced onions. Cook till light golden and remove a little for garnish.
2️⃣ Add ginger-garlic paste and sauté till raw smell disappears.
3️⃣ Add whole spices and roast till aromatic.
4️⃣ Lower the flame, add curd slowly and keep stirring.
5️⃣ Add cinnamon, mace and nutmeg, mix well.
6️⃣ Add all vegetables and salt. Cook for 2–3 minutes.
7️⃣ Add soaked basmati rice and water. Mix gently and adjust salt.
8️⃣ Close the cooker and cook on medium flame for 5–6 whistles.
9️⃣ Open the cooker, add kewra water and food colour. Cover and give 2–3 minutes dum.



💡 Tips

✨ Use long-grain basmati rice for best aroma.
✨ Do not overcook vegetables; they should stay slightly firm.
✨ Always add curd on low flame to avoid splitting.
✨ Gentle mixing keeps rice grains separate.
✨ Dum at the end enhances flavour and fragrance.

📋 Ingredients

🍗 Chicken – 300–400 g (with or without bones)
🌽 Sweet Corn – 1 bowl
🥕 Carrot – 1 small (finely chopped)
🧅 Onion – 1 small (finely chopped)
🥬 Cabbage – ½ cup (finely chopped)
🫑 Capsicum – ½ cup (finely chopped)
🧄 Ginger Garlic Paste – 1 tbsp
🧈 Butter – 2–3 tbsp
🥄 Light Soy Sauce – 8–9 tbsp
🥄 Dark Soy Sauce – 3–4 tbsp (for colour)
🌶 Black Pepper Powder – 1 tsp (or to taste)
🧂 Salt – to taste
🌾 Cornflour – 3–4 tbsp
💧 Water – 1.5 litres (for stock) + 1 cup (for slurry)



📝 Method

1️⃣ Wash the chicken well and add it to a deep pot with ginger-garlic paste, salt and 1.5 litres water.
2️⃣ Cover and boil on high flame until the chicken is fully cooked and stock is flavourful.
3️⃣ Remove chicken, shred it finely and keep the stock aside.
4️⃣ In another pan, melt butter on low flame.
5️⃣ Add chopped onion, carrot, cabbage and capsicum. Sauté on medium flame for 2–3 minutes.
6️⃣ Add sweet corn and cook for another 2 minutes.
7️⃣ Add shredded chicken and mix well.
8️⃣ Slowly add prepared chicken stock and stir.
9️⃣ Add light soy sauce, dark soy sauce and black pepper powder. Mix well and taste.
🔟 In a bowl, mix cornflour with 1 cup water to make a smooth slurry.
1️⃣1️⃣ Add slurry slowly to the soup while stirring continuously.
1️⃣2️⃣ Boil on high flame until the soup turns thick and silky.
1️⃣3️⃣ Do a final taste check and switch off the flame.



💡 Tips

✨ Boil chicken slowly for a richer and clearer stock.
✨ Chop vegetables very fine for a smooth, restaurant-style soup.
✨ Add salt carefully because soy sauce is already salty.
✨ Always add cornflour slurry slowly while stirring to avoid lumps.
✨ The soup should coat the spoon lightly, not too thick or watery.

🧈 Butter – 3–4 tbsp
🍫 Cocoa Powder – 3 tbsp
🍬 Caster Sugar – 1 cup
🥚 Egg – 1 (room temperature)
🌾 All-Purpose Flour (Maida) – 1 cup
🧁 Baking Powder – 1 tsp
🧪 Baking Soda – 1 tsp
🧂 Salt – 1 pinch
🥛 Milk – 1 cup (room temperature, as needed)
🌼 Vanilla Essence – 1 tbsp
🛢 Vegetable Oil – 2 tbsp

🍫 For Chocolate Ganache
🍫 Dark Chocolate – 100 g
🥛 Fresh Cream (hot) – 100 g



📝 Method
1️⃣ Melt butter in a heavy-bottom pan on low heat, then switch off the flame.
2️⃣ Add cocoa powder and whisk until smooth and lump-free.
3️⃣ Add caster sugar and egg, whisk well.
4️⃣ Sift in flour, baking powder, baking soda and salt.
5️⃣ Add milk gradually and whisk to make a smooth batter.
6️⃣ Add vanilla essence and oil, mix gently.
7️⃣ Cover the pan and cook on very low flame for 20–25 minutes.
8️⃣ Check with a toothpick — if it comes out clean, the cake is ready.

🍫 Chocolate Ganache
9️⃣ Melt dark chocolate and add hot fresh cream.
🔟 Mix until smooth and glossy, then spread over the cooled cake.



💡 Tips
✨ Always cook the cake on low flame to avoid burning.
✨ Do not over-mix the batter after adding flour.
✨ Oil helps keep the cake extra moist.
✨ Let the cake cool slightly before spreading ganache.

Gobhi Palak Gosht Recipe

📋 Ingredients / सामग्री
🥩 Gosht – ½ kg
🥬 Palak – ½ kg
🥦 Gobi – 2 small (hand-torn florets)
🛢 Sarson ka Tel – 2 tbsp
🧅 Onion – 2 small (finely chopped)
🧄 Ginger Garlic Paste – 2 tbsp
🌿 Coriander Powder – 2½ tbsp
🌶 Red Chilli Powder – ½ tsp
✨ Turmeric Powder – 1 tsp
🌸 Garam Masala – little (half now, half at end)
🌶 Green Chillies – as needed
🧂 Salt – to taste
🌿 Fresh Coriander – for garnish
➕ Hing – a pinch



📝 Method / विधि
1️⃣ Heat mustard oil in cooker till raw smell goes, add a pinch of hing.
2️⃣ Add onions and sauté till light golden.
3️⃣ Add gosht, bhunao till water dries and colour changes.
4️⃣ Add ginger-garlic paste and roast till raw smell finishes.
5️⃣ Add coriander, red chilli, turmeric, salt and a little garam masala. Bhunao well (add little water if needed).
6️⃣ Add palak and hand-torn gobi florets. Mix well.
7️⃣ Close cooker and pressure cook till gosht is soft (7–8 whistles, adjust as per cooker).
8️⃣ Open lid, cook on high flame till water dries.
9️⃣ Add green chillies and remaining garam masala, give final bhunai.
🔟 Garnish with fresh coriander and serve hot.



💡 Tips / टिप्स
✨ Hing removes gobi ki raw smell and keeps taste clean.
✨ Don’t over-brown onions, warna taste kadwa ho jaata hai.
✨ Hand-torn gobi cooks better with gosht.
✨ Palak aur gobi apna pani chhodti hain — extra water ki zarurat nahi.
✨ End me garam masala add karne se aroma fresh rehta hai.

Mug Cake 🧁
📋 Ingredients / सामग्री
🥣 All-Purpose Flour – 6 tbsp
🍬 Powdered Sugar – 2 tbsp
🧁 Baking Powder – ½ tsp
🧂 Baking Soda – 2 pinches
🛢 Oil – 2½ tbsp
🥛 Milk – as needed
🍯 Condensed Milk – 2 tbsp (optional)
🥛 Homemade Cream – 2 tbsp
🍶 Vinegar – 1 tsp
🌼 Vanilla Essence – 1 tsp
🍫 Nutella – for topping (optional)



📝 Method / विधि
1️⃣ Take a mug or bowl and add flour, powdered sugar, baking powder & baking soda. Mix well.
2️⃣ Add oil, condensed milk (optional), cream, vinegar & vanilla. Mix gently.
3️⃣ Add milk little by little to make a smooth, flowing batter.
4️⃣ Microwave for 1 minute 20 seconds (time may vary with mug size).
5️⃣ Check cake, add Nutella on top if you like, and serve warm.

Gajar Ka Halwa

📋 Ingredients / सामग्री
🥕 Carrots (grated, thick grate) – 2 to 2½ kg
🥛 Full Cream Milk – 1 kg (added in stages)
🍬 Sugar – 1 cup (adjust to taste)
🧈 Desi Ghee – 150 g
🧀 Mawa – 100 g
🌰 Cashews / Mawa – for light garnish



📝 Method / विधि
1️⃣ Grate carrots using thick grater for soft, natural texture.
2️⃣ Add carrots to cooker, sauté lightly till they release water.
3️⃣ Cover and cook on medium flame for 4–5 whistles till carrots are very soft.
4️⃣ Open lid and cook on high flame till all water dries completely.
5️⃣ Add milk in stages, cook each time till milk absorbs fully.
6️⃣ Add sugar, mix and cook till halwa thickens again.
7️⃣ Add desi ghee little by little, keep stirring patiently.
8️⃣ When halwa leaves sides and gives roasted aroma, add mawa.
9️⃣ Mix well, garnish lightly and switch off gas.

✨ Thick-grated carrots give best halwa texture.
✨ Water must dry completely before adding milk.
✨ Add milk slowly in stages for creamy richness.
✨ Patience during ghee bhunai brings real colour & flavour.

Bathua Paratha

📋 Ingredients / सामग्री
🥬 Bathua – ½ kg
🌶 Garlic – 6–7 cloves
🌶 Dry Red Chillies – 6–7
🌱 Cumin Seeds – 1 tsp
🧂 Salt – to taste
🫓 Wheat Flour – 2–3 bowls
🛢 Mustard Oil – for roasting



📝 Method / विधि
1️⃣ Wash bathua 3–4 times and boil in water for 10–15 minutes.
2️⃣ Strain and let it cool slightly.
3️⃣ Grind boiled bathua with garlic, dry red chillies, cumin and salt into a smooth paste.
4️⃣ Mix wheat flour with bathua paste and knead into a soft dough.
5️⃣ Roll dough balls into parathas.
6️⃣ Roast on tawa with mustard oil till golden on both sides.



💡 Tips / टिप्स
✨ Don’t over-boil bathua, warna colour dull ho jaata hai.
✨ Soft dough makes softer parathas.
✨ Mustard oil gives authentic desi flavour.
