गोभी परांठा
चैनल: फूडफूड-संजीव कपूर्स किचन
सामग्री
• आटा 2 cups + छिड़कने के लिए
• फूलगोभी 2-3 छोटे फूल
• नमक to taste
• अजवाइन 1/2 छोटा चम्मच
• पालक की प्यूरी 1/4 कप
• तेल 1 tablespoon + तलने के लिए
• प्याज़ 1 मध्यम आकार
• हरी मिर्च 1
• लाल मिर्च पावडर a pinch
विधि
एक बड़े बाउल में आटा रखें, उसमें नमक, अजवाइन और पालक की प्यूरी डालकर अच्छी तरह मिला लें।
आवश्यकतानुसार पानी और एक बड़ा चम्मच तेल डालकर मध्यम नरम लोई गूंद लें। ढक कर 15-20 मिनिट तक रहने दें। लोई को समान भागों में बाँटकर उनके पेढ़े बना लें। गोभी के फूलों को कद्दूकस कर लें। उसमें प्याज़ और हरी मिर्च काटकर डालें। लाल मिर्च पावडर डालकर मसलते हुए मिला लें। एक छोटा चम्मच आटा डालकर अच्छी तरह मिलाएँ और थोड़ी देर के लिए रहने दें। हर पेढ़े को सूखे आटे में लपेटकर छोटे रोटी बेल लें और किनारों को हल्का दबा लें। बीच में चम्मच भर गोभी का मिश्रण रखें, किनारों को इकट्ठा करके सील कर लें और फिर से पेढ़े बना लें। थोड़े सूखे आटे में लपेटकर 5-10 मिनिट तक रखें। एक नॉन-स्टिक तवा गरम कर लें। हर भरे हुए पेढ़े को थोड़े सूखे आटे में लपेटें और बेल कर परांठा बना लें। पराठों को गरम तवे पर रख कर थोड़े से तेल के साथ मध्यम आँच पर पकाएँ जब तक दोनों तरफ से पक जाए और सुनहरा हो जाए। दही और आचार के साथ गरमागरम परोसें।
