CRISPY BUTTERMILK FRIED CHICKEN πŸ—πŸ—πŸ˜‹πŸ˜‹

***CRISPY BUTTERMILK FRIED CHICKEN WITH CHILLI GARLIC MAYO DIP

Ingredients:

*For the Chicken:

250g boneless chicken leg (cut into cubes)

*PRE-MARINATION:

Salt – to taste

Crushed black pepper – Β½ tsp

White vinegar – 1 tsp

*SECOND MARINATION:

Buttermilk – ΒΎ cup

Salt – to taste

Crushed black pepper – Β½ tsp

Ginger / garlic paste – 1 tsp(each)

Cumin powder – ΒΌ tsp

Vinegar – 1 tsp

Water – 1/2 cup (if needed to adjust consistency)

*SEASONED FLOUR MIX(For coating):

All-purpose flour (maida) – 1cup

Corn flour – 1/2 cup

Salt – 1/2 tsp

Crushed black pepper – Β½ tsp

Ice-cold water – for dipping

Oil – for deep frying

**FOR CHILLI GARLIC MAYO DIP,
HOMEMADE MAYO BASE:

1 egg yolk

Mustard paste – Β½ tsp

White vinegar – 1 tsp

Neutral oil – approx. 150–200 ml (added gradually)

*TO FLAVOR THE MAYO:

Salt – to taste

Chilli powder – Β½ tsp

Crushed black pepper – ΒΌ tsp

Vinegar – a few drops

Chopped parsley or coriander – 1 tsp

Burnt or confit garlic – 1 tsp (minced)
