Grilled Corn Salad
Ingredients:
3 ears of corn, husked
1 avocado, diced
1/4 bunch of cilantro, chopped
200 g red grape tomatoes, halved
200 g yellow grape tomatoes, halved
2 red onions, finely chopped
For the Dressing:
4 tablespoons olive oil
2 teaspoons lemon juice
1 tablespoon Dijon mustard
1 tablespoon maple syrup
Salt and pepper to taste
Instructions:
Preheat your grill to medium-high heat.
Place the ears of corn directly on the grill grates. Grill the corn, turning occasionally, until it is charred in spots and tender, about 10-12 minutes.
Remove the corn from the grill and let it cool slightly. Once cool enough to handle, cut the kernels off the cob using a sharp knife and transfer them to a large mixing bowl.
Add the diced avocado, chopped cilantro, halved grape tomatoes (both red and yellow), and finely chopped red onions to the bowl with the grilled corn kernels.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, and maple syrup until well combined to make the dressing. Season with salt and pepper to taste.
Pour the dressing over the salad ingredients in the large mixing bowl.
Gently toss everything together until the salad is evenly coated with the dressing.
Taste and adjust seasoning if needed, adding more salt, pepper, or lemon juice according to your preference.
Transfer the grilled corn salad to a serving dish or platter.
Serve the salad immediately, or cover and refrigerate until ready to serve.
