What I eat at CRAVE - A local artisan bakery in Mangalore !

#1 -BANOOFEEEE PIE . If you’ve not tasted it , you’re wasted space 😋
#2- Lava Cupcake with Vanilla ice cream . This is my “ just before they close “ go-to dessert . I’ll die ,but I need to eat this on the way up .
#3 -Spicy Chicken Sandwich . I met someone special , fighting over this sandwich so I’m partial 😅. #4- Their Butter Biscuits ( I can never remember the spelling ) Shrewsbury ..??? . Dip these yummy scrumptious -buttery-delights in some tea and your afternoon is a done deal 💯 .
#5 -BAKED CHEESECAKE : I am 🤤 right now thinking about it . It’s so perfect , I don’t have words for it .
#6- Oreo Shake - I would pretend it’s a protein shake and have this post my workout . This proves why I haven’t been able to loose the extra weight 🤦🏻‍♀️. .
#7-Have you tried their Macarons...? Go please go if you haven’t

In 2011, I was 18 and I just moved into a new city in South India . I hated it .. it was hot, humid and everything was the opposite of what I wanted my college atmosphere to be . .
I’m 25 today and it’s 2018 and I’m still in the same city and I’m in love with it . In 20 days I’ll be going back to my home town and it breaks my heart to move away from this city that I now call home . So snippets of food from what I have grown to love over the years staying in Mangalore/Kudla/Kodial . .
The around one is goli Baje , it’s fried dough served hot with some coconut chutney . .
The long ones are banana podi ( fritters ) and they’re just DE-LI-CIOUS.

Easy sponge Victoria Cake .

Ingredients :-

1) 1 and 1/2 cup of self raising maida
2) 1 teaspoon of baking powder
3) 3/4 cup of Margarine
4) 3 eggs
5) 1 teaspoon of vanilla essence
6) 1 tablespoon of Milk
7) 1/2 cup of castor sugar

Method :-

Sift the maida and baking powder together .
Now add the remaining ingredients to this and mix it well .

Line a baking tray with butter or butter paper and pré heat the oven to 180 degrees for 20-25 mins.

For the icing, I had used a simple cream cheese recipe .

You can use the icing of your choice .

For the icing :-

Ingredients :-
1) 200 grams of cream cheese
2) 1/4th cup of icing powder
3) white chocolate chips

Method :-
Melt the white chocolate chips using a microwave or you can go old school and melt it over a pot of boiling water .
I did the both , losing patients with the second one .

Mix the cream cheese and icing powder to the melted chocolate and whisk it well.

Apply a generous amount of this filling on the 1st layer of the cake and top it off with strawberries and strawberry jam .
Then place the 2nd layer of the cake and pour the remaining filling on it .

Prawns in Chilli bean sauce .

Ingredients :-
1) 1 Kg of prawns
2) 2 Tablespoon of chilli bean
3) 2 tablespoon of spicy chilli sauce
4) 2 tablespoon of fish sauce
5) Salt and pepper to taste .

Method :-
Marinate the prawns in this condiments and after 4 hours fry them in some butter and the sauce 🙂
Simple isn’t it ?

Pork N'ai Iong- Pork in black sesame paste !

Ingredients :-
1) 1 kg of pork with fat in it .
2) 3 tablespoon or so of black sesame paste
3) 1 large onion - grounded to a paste
4) 1 teaspoon of turmeric
5) salt to taste
6) mustard oil

Method :-
Heat the mustard oil and fry the paste in t . Add turmeric and mix it well . Add the pork pieces into this and add water to let it cook . Add salt to take and make sure you have completely cook the water off so it becomes almost dry like state .

Spicy chicken tortilla !

So I'm posting the recipe for the chicken , since you can use any veggie for the wrap as such :)

Ingredients :-

1) 500 grams of chicken
2) 1 packet of curd
3) 2-3 tablespoon of red Thai chilli paste
4) 2-3 pieces of garlic - chopped
5) 1 inch of ginger - grated
6) Salt and pepper to taste
7) 1 teaspoon of grated nutmeg

Method:-

Mix all of the ingredients together and marinate the chicken for 4-5 hours .
And fry it in some olive oil.

Thyme pastry sausage roll.

So easy to eat and make , if you're bored and have a half empty fridge , you can always take this recipe , change it up and make yourself a wonderful snack.

Ingredients :-

1) 300gms of flour
2) 250 mg of unsalted butter
3) 1 tablespoon of dried thyme
4) salt
5) 1 egg
6) pork sausages ( as used in this item).

Method :-

Sift the flour , salt and thyme together . Mox t well and add cubes of the butter to this . When the dough is buttery enough , add cold water to it . About 3-5 tablespoon should do it. Roll this well and freeze it after wrapping it with cling paper for 15 mins.

Roll the dough onto a floured surface and make it into tiny circles . Flatten it using a rolling pin. Place the pre fried sausages into the pastry and roll it gently to cover them all sides . Coat this with beaten egg and bake it at 150-180 degrees Celsius for 15 mins or so.

Sweet potato hummus .

Something Arabic and posting after quiet a while .
I'm down with the flu , so I have a lot of time on my hand to make something quick and healthy. 😋

Ingredients :-
1) 400gm of sweet potato ( well boiled until it's soft ).
2) 1 cannof pre boil chickpea
3) 7-8 pieces of garlic - chopped
4) IDEALLY tahini paste , since I did not have one I used 3 tablespoon of mayonnaise .
5) 2 teaspoon of black pepper
6) 2 teaspoon of garam masala
7) 10 pieces of chopped pistachio
8) lime juice ( eqv. 1 lime )
9) salt to taste
10) Coconut oil
11) Olive oil

Method:-
Mix all the ingredients into a mixer, except the oils and the pistachio and add the coconut oil to it slowly . Make sure it becomes a smooth paste , season it with salt . Add the end add the pistachios to the hummus and drizzle the olive oil over it .

Serve with toasted pita bread :)

Plum sauce and pork chops .

Aye aye captain , I got your back 🙈 .

I was bored with my daily recipes , so why not twist the everyday ( or not ) pork chop recipe into something different .
The marinade for this is made with plum sauce , chipotle, oysters sauce & peri peri wild herbs . Add thyme and some parsley to this . Top it with a good merlot and let it sit for an hour .
In a pan , melt some butter and add the meat to it . Cover and after 15 mins add the marinade to it. Again let it cook slowly for 1 hour or so , and add some chopped carrots and French beans to this . Let that cook well and viola , your chops are ready as well!

I grew up to eating Bengali food . Durga puja was widely celebrated in my state Shillong , as we had a large community of Bengali population living in Shillong . Hence my love for rosagulla and brinjal have taken roots from this connection . Methi brinjal , simple and delicious . Heat up some mustard oil in a pan , fry 1/2 teaspoon or so of mustard seeds and add methi leaves to this . Cut the brinjal ( aubergine ) into thin flat slices , instead of the usual round ones . Add turmeric to the pan and add one or two pieces of dry red chilli . Let this heat up we'll and add the brinjal to this . Cover and let it fry until its ready ! Now I've mixed this with some Jeera potatoes .
Just fry some jeera , add turmeric and diced potatoes and viola , another dish is ready :) Goes well with rice or roti :)
