🌸 Ukadiche Modak Recipe
📝 Samagri
Outer covering ke liye:
1 cup – Chawal ka aata (rice flour)
1 cup – Paani
1 tsp – Ghee
Thoda namak
Stuffing (bharwan) ke liye:
1 cup – Grated nariyal (fresh)
¾ cup – Gud (jaggery), crushed
1 tsp – Ghee
½ tsp – Elaichi powder
1 tbsp – Khuskhus (optional, bhuna hua)
Thode chopped dry fruits (optional)

🍴 Vidhi
1. Stuffing banane ke liye:
Kadhai me 1 tsp ghee garam karein.
Grated nariyal daal kar 2–3 min bhunein.
Gud daal kar slow flame pe milate rahe.
Gud melt hote hi elaichi powder aur dry fruits daal kar mix karein.
Thoda thanda hone dein.
2. Outer covering (Ukad) banane ke liye:
Ek pan me paani + ghee + namak ubalein.
Gas slow karke rice flour daal kar achhi tarah milaayein.
Cover karke 2–3 min steam hone dein.
Thoda thanda hone ke baad haath par ghee laga kar dough ko smooth gundh lein.
3. Modak banana:
Dough ka chhota ball banayein, haath se ya mould ki madad se cup shape banayein.
Usme coconut-gud ka stuffing bharein.
Upar se carefully pinch karke modak ka shape dein.
4. Steam karna:
Steamer me paani garam karein, ek plate me ghee lagayein.
Modak ko rakh kar 10–12 min steam karein.
Steam hone ke baad ghee laga kar serve karein.

🍯 Tips
Dough garam hote hi gundhna shuru karein, warna phatne lagta hai.
Stuffing ko jyada na pakaayein, nahi to gud kadak ho jaayega.
Steamer me rakhne se pehle modak ke upar thoda paani ya ghee lagayein, taaki chipke nahi.
