Air Fryer Tangdi Kebab. Recipe 👇
Ingredients:

10 chicken drumsticks, lightly slit
Marination:
½ cup thick curd
2 tsp ginger garlic paste
2 tsp lemon juice
2 tsp mustard oil (or any neutral oil)
1 tsp salt
¼ tsp turmeric
2 tsp Kashmiri chilli powder
1 tsp hot chilli powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala
½ tsp chaat masala
½ tsp smoked paprika
1 tsp crushed kasuri methi
For brushing:
Melted Butter
lemon juice

Method:

Marinate the chicken with the mixture, massaging well into the slits
Let it rest for 1 hour (overnight for best flavor)
Tap the Chicken preset on your Agaro Galaxy Digital Air Fryer and airfry at 180°C for 18-20 minutes, flipping halfway through
Melt butter and lemon, then brush generously over the hot kebabs
Serve with onion slices, green chutney & a squeeze of fresh lemon & enjoy!

Smoky Afghani kofta. Recipe 👇
Ingredients

For Kofta
600 gm mutton mince
1 tbsp ginger garlic paste
1 tbsp crushed green chillies
2 tbsp besan
1/4 cup barista
Salt to taste
2 tsp red chilli powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala
1 tsp black pepper
1 tbsp butter
few pudina & coriander leaves
For Afghani Paste
1 tbsp oil
3 onions
10 cashews
8 green chillies
2 cardamom
1 mace
Fresh coriander & mint leaves
For Gravy
3 tbsp oil
1 tbsp ginger garlic paste
Prepared Afghani paste
1/2 cup curd
Salt to taste
1 tsp black pepper powder
1 tsp garam masala
1 tsp coriander powder
1 tsp cumin powder
1 tsp chaat masala
Water as required
1 tsp kasuri methi
1/2 cup fresh cream
Charcoal for smoke

Method

In a grinder add mutton mince with all the mentioned ingredients, grind it till smooth.
Shape into koftas and fry until golden.
For the Afghani paste, saute onions in oil, with cashews, green chillies, cardamom, mace, coriander, mint.
Cool & grind it to make smooth paste.
Heat oil, add ginger garlic paste, prepared paste and cook well until aromatic.
Add all spices and saute again.
Add curd & Cook on low flame for 5 to 7 mins.
Add fried koftas, kasuri methi & fresh cream.
Pour water according to desired gravy.
Simmer for few minutes & garnish with coriander.
Give charcoal smoke.
Serve hot with naan, roti or jeera rice.

Bakra Eid Special Pepper Mutton. Recipe 👇
Ingredients

For Spice Mix
2 tbsp black peppercorns
1 tsp cumin seeds
1 tsp fennel seeds
1 tbsp coriander seeds
3 whole dry red chillies
Roast for 2 minutes, cool & grind into a powder

For Mutton

600 gm mutton
½ cup ghee
2 cinnamon sticks
1 black cardamom
6 cloves
1 tsp cumin seeds
2 onions (sliced)
½ cup curd
2 tbsp green chilli & ginger-garlic paste
Salt as per taste
½ tsp turmeric powder
1 tsp garam masala powder
Prepared spice mix
2 cups water
Curry leaves
Fresh coriander
Lemon juice
Method

Heat ghee in a pot & add whole spices.
Add sliced onions, saute until light golden.
Add mutton, roast well for 5-7 minutes.
Add salt, turmeric powder, garam masala & prepared spice mix.
Add curd & cook for 7 to 8 mins on low flame.
Pour water, cover & cook until the mutton turns tender.
Finish with curry leaves, fresh coriander & lemon juice.
Garnish with extra pepper powder and serve hot

Turkish Adana Kabab

Ingredients:

600 gms Chicken Mince
1 small Red bell pepper
1 small Onion
1 small green bell pepper
3 garlic
3 green chilies
1 tsp lemon juice
3 tbsp Coriander or parsley fresh
1 tsp Cumin Powder
1 tsp garlic powder
1 tsp paprika
1 tsp salt
Half tsp black pepper
1 Tsp Chilli Flakes
1 tsp Parsley
1/4 tsp oregano
3 tbsp bread crumbs

Salad:

Half small Tomato chopped
1 small cucumber chopped half cup Cabbage
2 tbsp Coriander or parsley half tsp Pomegranate powder(anaardana powder)
half tsp paprika
Pinch salt
Shallow fry Cooking Time 12-15 mins
Airfry at 190c for 20 minutes, flip halfway and spray cooking oil.
Bake at 190C for 20-22 minutes

Kung Pao Chicken. Recipe 👇
Ingredients

Chicken marination:
- 1/2 tsp salt
- 1/2 tsp black pepper
4 tbsp cornflour
- 1 egg
Gravy:
1 tbsp chopped garlic
Julienne cut ginger
1 onion
- Roasted peanuts
5-6 Red chillies
- 1-2 Green chillies
- 2-3 tbsp soy sauce
- 1/2 tbsp dark soy sauce
- 2 tbsp oyster sauce
- 1/2 tsp chicken powder
- 1-2 tbsp cornflour
- 1/2 cup water
Pinch of brown sugar

Method:

In a bowl, marinate the chicken and fry it until golden. Meanwhile, in another pan, heat 1 tbsp of oil, add garlic and ginger, and sauté for less than a minute. Then add onions, peanuts, and chilies, and cook for 1 minute. Finally, add the fried chicken and the prepared sauce and it's ready!

Air fried Chicken Kofta kebabs. Recipe 👇
Makes about 15 medium size kebabs

Ingredients

500g Ground Chicken (or you can use chicken thighs and pulse it in a food processor to a coarse paste)
- 1/2 tsp salt (or to taste), 1/2 tsp black pepper powder, 1 tsp paprika powder, 1/2 tsp cumin powder, 1 tsp coriander powder, 1/2 tsp sumac
1 tbsp lemon juice
- 1/2 cup chopped spring onion
- 1/2 cup chopped red and yellow bell pepper and 1 tomato finely chopped (squeeze the water out from both bell peppers and tomato) Instead of tomato can use a tbsp of tomato paste
- Add to a processor handful of fresh coriander leaves, 5 cloves of garlic, 1/2inch piece of ginger,3 green chillies & process until it's coarsely chopped
- 2 tbsp oil

Method:

Mix everything together and let it rest for 1 hour
Make small kebabs and airfry at 200C for 16 mins, flipping them halfway through (you can pan fry a small piece to check for seasoning in the beginning and adjust it accordingly)
You can also spray it with extra oil when you flip them.
If you don't have an airfryer or simply don't want to airfry them, then you can shallow fry the kebabs with a little oil in a pan.
You can also shape the kebabs and freeze them with some parchment paper in between, in an airtight container for up to a month.
Serve them with your favourite chutney or make sandwiches with them and enjoy.
