Ingredients
Cream: 80g
Milk Chocolate: 40g
Cream Cheese: 40g

Method
Heat Cream: Warm the cream in a saucepan or microwave until it just starts to simmer (do not boil).
Melt Chocolate: Pour the hot cream over the milk chocolate. Let it sit for 1 minute, then whisk until smooth.
Combine: Add the cream cheese to the chocolate mixture and whisk or blend until perfectly creamy.
Set: Cover and refrigerate for 6–8 hours to allow the ganache to firm up before use.

Ingredients
Dark chocolate: 200g
Cream: 110g
Coffee powder: 2 tsp
Butter: 15g

Method
Infuse: Warm the cream in a saucepan and stir in the coffee powder until fully dissolved.
Combine: Pour the hot coffee-cream over the dark chocolate and butter.
Melt: Let it sit for 2 minutes, then whisk gently from the center until the mixture is glossy and smooth.
Set: Allow the ganache to cool and set in the refrigerator for 4–6 hours before use.
