Orange kheer (also known as Komola Kheer or Santre ki Kheer) is a delicious Indian dessert made with thickened milk and fresh oranges. The key to this recipe is ensuring the milk is completely cooled before adding the orange segments and juice to prevent curdling.

Ingredients

1 liter full-fat milk

4-5 medium sweet, juicy oranges (peeled, segmented, deseeded, and chopped)

4-5 tbsp sugar (adjust to taste)

1/2 tsp cardamom powder

A pinch of saffron strands (optional, for color and flavor)

2 tbsp chopped nuts (pistachios, almonds, or cashews) for garnish

Instructions:

1. Heat 1 tbsp ghee in a pan. Add 1/4 cup blanched carrot, 1/4 cup boiled black eyed peas, 1/4 cup blanched green peas, 1/4 tsp black pepper powder and salt as per taste.

2. Saute it for about 5 to 6 minutes on low heat. Keep it a side.

3. Take another pan and dry roast ragi flour until it has a nice aroma on low heat.

4. Add 750 ml water to ragi flour and mix without any lumps. Cook till it becomes thick.

5. Add all the sauteed vegetables, 1/4 cup coriander leaves, 1/4 cup blanched spinach, 1/4 tsp black pepper powder, salt as per taste and 1 tbsp ghee.

6. Mix it well and cook it for about 5 to 6 minutes on low heat.

Instructions:

1. Cook 1 cup rice and spread to cool.

2. Soak tamarind (1 lemon-sized ball) in 1 cup warm water. Extract thick juice.

3. In a pan, boil tamarind juice with ½ tsp turmeric, salt to taste, and 1 tbsp jaggery. Simmer till slightly thick.

4. Roast masala: In 1 tsp oil, add

1½ tbsp coriander seeds

1 tbsp chana dal

1 tbsp urad dal

4-6 dry red chillies

½ tsp pepper

½ tsp methi seeds

1 tbsp sesame seeds

2 tbsp grated coconut

Roast till golden, cool, and grind coarsely.

5. Temper: Heat 2 tbsp gingelly oil. Add

1 tsp mustard seeds

3 tbsp peanuts

2 dry red chillies

2 slit green chillies

1 tsp chopped ginger

1 sprig curry leaves

½ tsp hing

Fry till aromatic.

6. Add the tamarind mix to tempering. Cook 2 mins. Add ground masala. Mix well and cool slightly.
