Lemon curd is such an easy thing to make and delicious on just about everything.. I love it with Pavlova..It s so much better when it's homemade❤️❤️..
Ingredients :
1/2 cup sugar
1 tbsp lemon zest
4 egg yolks
1/4 cup lemon juice
1/4 cup cold unsalted butter
Strain egg yolks into a pot and beat lightly with a wire whisk. Whisk in the sugar and give it a good mix until lighter in color. Stir in lemon juice and zest gradually.
Heat on low, while stirring constantly with a wire whisk until mixture thickens, just starts to bubble and coats back of the wooden spoon.
Remove the pot from heat and then add the cold, cubed butter and mix until melted. The final curd will be silky smooth.
Transfer the curd into a sealable container or a bowl. Make sure to cover the surface with plastic wrap to prevent a skin from forming.
