Sticky Korean Gochujang Glazed Chicken Bowls with Jasmine Rice & Sesame Vegetables
Ingredients:
2 lbs boneless chicken thighs, cut into bite-sized pieces
2 tablespoons sesame oil
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup gochujang paste
3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon brown sugar
1 tablespoon rice vinegar
1 teaspoon chili flakes
1 tablespoon cornstarch
2 cups jasmine rice, cooked
2 cups broccoli florets
1 red bell pepper, sliced
1 onion, sliced
2 green onions, chopped
1 tablespoon toasted sesame seeds
Fresh cilantro for garnish
Salt and black pepper to taste
This recipe is a perfect balance of spicy, sweet, and savory. Here is how to bring those Sticky Korean Chicken Bowls together:
1. Prep the Rice & Veggies
Cook the Rice: If you haven’t already, cook your jasmine rice according to the package instructions. Keep it covered and warm.
Sauté the Vegetables: In a large pan or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the broccoli, red bell pepper, and onion. Sauté for 5–7 minutes until tender-crisp. Season with a pinch of salt and pepper, remove from the pan, and set aside.
2. Sear the Chicken
Wipe out the pan and add the remaining sesame oil.
Season the chicken pieces lightly with salt and pepper. Add them to the pan in a single layer (work in batches if needed).
Cook for 6–8 minutes until golden brown and cooked through.
3. Make the Sticky Glaze
While the chicken cooks, whisk together the garlic, ginger, gochujang, soy sauce, honey, brown sugar, rice vinegar, chili flakes, and cornstarch in a small bowl until smooth.
Lower the heat to medium and pour the sauce over the cooked chicken.
Toss well to coat. Let it simmer for 2–3 minutes; the cornstarch and sugars will thicken the sauce into a thick, glossy glaze that sticks to the meat.
4. Assemble the Bowls
Scoop a generous portion of jasmine rice into bowls.
Add a scoop of the sesame vegetables on one side and the glazy chicken on the other.
Garnish: Top with plenty of toasted sesame seeds, chopped green onions, and fresh cilantro.
