My homemade seeds & nuts mix
This is one of the ways I prepare for school resumption. I make this nutritious seeds and nuts mix to fortify my children’s oats and pap; something they take almost every morning before school.
Ingredients:
✓Almonds (diced)
✓Pumpkin seeds
✓Cashew nuts
✓Flax seeds
✓Coconut (shredded)
✓Peanuts (groundnuts)
✓Honey
✓A pinch of cinnamon powder
Procedure:
1. Dice the almonds into small pieces.
2. In a bowl, combine almonds, pumpkin seeds, cashew nuts, and flax seeds.
3. Add honey and a pinch of cinnamon, then mix thoroughly.
4. Line an oven tray with parchment paper and spread the mixture evenly.
5. Roast in the oven on low heat, stirring occasionally to prevent burning.
6. When it starts getting crunchy and slightly brown, add the shredded coconut.
7. Return to the oven and continue roasting until golden brown.
8. Add the peanuts last, mix, and allow it heat for a few minutes.
9 Remove, let it cool, and store in an airtight container.
I use this every morning to fortify oats or pap, it’s delicious, crunchy, and my kids absolutely love it.
