I roasted my egusi seeds before making the soup… and honestly, I should’ve tried this sooner.
That quick dry-roast brings out a deeper, nuttier flavor that makes the soup taste even richer — without needing to go crazy with the oil.
Then came the pepper, crayfish, iru, protein and greens… and suddenly I was standing over the pot “taste testing” every 2 minutes.
