You know what?

1. Researchers have found that some microgreens like red cabbage, cilantro, and radish contain up to 40 times higher levels of vital nutrients than their mature counterparts (herbs) 🍀🌱💫

2. They should not be mistaken for sprouts. But they are young seedlings of vegetables and herbs, which include tiny greens which are harvested in less than 14 days, after germination. They are usually about 1-3 inches long and come in a rainbow of colours, which has made them popular in the recent years.

3. According to About home, you can grow any lettuce, salad green, or herb as a microgreen. But it's easy to start with a pre-packaged seed mix, and you can look for specific microgreen mixes, or simply choose a mesclun mix (salad mix) to grow as microgreens. 🌱🍁🍀🍂☘️

4. Some popular varieties to grow as microgreens include--mustard, kale, beet, greens, spinach, radish, peas, cabbage, basil, and lettuce and carrot and broccoli 🥕 🌿 🥦

Scientific data on the nutritional content of microgreens is limited, but research has shown that microgreens do contain a higher concentration of many nutrients when compared with the mature, fully grown vegetables or herbs.

According to the United States Department of Agriculture, micro kale greens contain approximately 29 calories per 100 grams.

Further data on nutrients, such as carbohydrates, protein, and fat content, have yet to be compiled. However, several studies have demonstrated the high level of phytonutrients, antioxidants, vitamins, and minerals that microgreens contain. Microgreens are also rich in enzymes, which enable them to be more easily digested.
