Beetroot Pancakes!!!!
I have been making these for my little tot since she was about 6 months old. And at four, they are still popular also with friends and family. I demonstrated this easy pancake recipe at the .opuke workshop on Friday.
Plunket had a great chat to the group about nutrition for babies and toddlers especially on Fibre and not having too much when starting solids. So due to the high fibre content of this healthy snack itβs recommended to introduce these in small amounts until around the age of two. More info on the Plunket website.
Ingredients;
2 Eggs (flax egg replacement works great for veg/vegan)
1 Large Beetroot grated raw
1 Large Banana
1/4 cup of Milk of choice
1/3 of a cup of Buckwheat flour
1/3 of a cup of Oats (almond flour or Gluten free flour works great for celiac/gf)
1/3 of a cup of Desiccated Coconut
1/2 teaspoon of Baking Powder
Blend ingredients together with stick or what ever blender you have.
Place tablespoons of mixture in pan with your choice of oil and cook around 30 seconds on each side at medium temperature.
This recipe makes about 30 small pancakes which can be frozen.
