Day 5. Sourdough discard Focaccia Bread. Success! This is delicious and so easy to make. Just takes a little time though. Recipe in Cookidoo. This is a wholemeal version.

Day 4: Today I used the sourdough discard to make granola. Delicious and no wastage. You can play with the flavours as you wish. Mine has various nuts, chia seeds, oats, linseeds, apricots, cranberries, dates and spices. The discard is the binding agent for this recipe.

Day 2: I just fed the starter and there was some def growth.
Day 3: Today I had to discard some starter so that was used to make sourdough discard crackers. How amazing are these. You can flavour them as you wish. Some useful tips learned along the way: if you roll your dough and edges are uneven fold your mat over and re role it. Perfect edges. This was yoir discard is used and doesn't go into the rubbish bin. Win win win!

Follow me as I start a 2 week sourdough journey. It's time I learnt to make sourdough properly with some skill so I signed up to Thermodette Sourdough for dummies course. Tonight I made the apple starter. Apparently the apple juice helps speed up the process lets see how we go. .

You can't have a pizza night without Mozzarella cheese, and we all know how pricey fresh mozzarella can be. So, why not make it yourself? I made three balls for just $3.50, which is pretty economical. Next time, I'll tweak the texture to make it softer, but it worked beautifully on my pizza. PM me for the recipe.

Excess broccoli, dehydrated for out-of-season use. Reconstitute and enjoy in stir-fries and stews. I used leftover leaves and scraps to create healthy snack packs for my chickens by blending them with fresh herbs and yogurt. They get a nutritious treat once a week, easily grabbed from the freezer.
