Had to share my DF veggie bake recipe because itβs SO good π€€β¨
Ingredients:
Potatoes
Carrots
Broccoli
Capsicum
Spinach
1β1Β½ cans coconut cream
GF chicken stock
GF vegetable stock
Salt & pepper
Nutritional yeast or DF cheese
Method:
Preheat oven to 180 fan bake.
Slice potatoes & carrots into rounds and half boil. Slice broccoli thinly, dice capsicum into medium squares and chop spinach to your preferred size.
Once potatoes & carrots are done, drain and let stand for 5 mins. Add them to your baking dish then layer spinach, broccoli & capsicum on top.
While the veggies are boiling, heat coconut cream in a pot over medium heat. Add GF chicken stock & vegetable stock to taste (I like enough so you can really taste the chicken flavour through the cream), plus salt & pepper. Stir until it starts to thicken slightly then pour over the veggies.
Top with nutritional yeast or DF cheese and bake for 30β40 mins or until the sauce has thickened up nicely π€€
Such an easy cozy dinner and even better knowing all the veggies in this one came straight from the garden πβ¨
