CADOC'S LEGACY LIVES ON

We were here not to compete but to share our humble heirloom dish based on the original Sisig BBQ recipe of our Ingkung Cadoc Dinio, the first to serve Sisig in Crossing, Angeles City in the 70s.

In Angeles City, Ordinance No. 405, Series of 2017 declares Sizzling Sisig as an Intangible Cultural Heritage. It mandates that the authentic recipe consists of boiled then grilled chopped pig's ears or cheeks, onions, chili peppers, and vinegar/calamansi, with minced chicken liver as optional. The ordinance officially dictates ABSOLUTELY NO EGG OR MAYONNAISE.

May we continue to preserve the authenticity of Sisig in our beloved city.

If not, who else will? Hats off to all culture and heritage advocates who unselfishly dedicate their time and effort in securing this intangible heritage will be passed on to the next generation.
