🌯 Lumpiang Ubod

Makes: about 12–15 pieces

Ingredients

For the filling:
500 g fresh ubod (heart of palm), julienned
250 g shrimp, peeled and chopped
150 g pork, finely chopped
1 medium onion, chopped
4 cloves garlic, minced
1 tbsp cooking oil
2 tbsp soy sauce
1 tbsp oyster sauce
½ cup water or shrimp stock
½ tsp ground black pepper
Salt, to taste
1 tbsp sugar (optional)
2 tbsp chopped green onions

For wrapping:
12–15 lumpia wrappers
For serving:
Lettuce leaves

Lumpia sauce

👩‍🍳 Procedure
Sauté the aromatics: Heat oil and sauté garlic and onion until fragrant.
Cook the pork: Add chopped pork and cook until no longer pink.
Add shrimp: Stir in shrimp and cook until just done.
Add ubod: Add the julienned ubod and sauté for 2–3 minutes.
Season: Add soy sauce, oyster sauce, pepper, and sugar if using.
Simmer: Pour in water or shrimp stock. Cover and simmer for about 5–8 minutes, until the ubod is tender but not mushy.
Reduce: Cook uncovered until most of the liquid has evaporated. Stir in green onions.
Cool completely before wrapping. This is important so the wrappers won't become soggy.
Place a lettuce leaf and a portion of filling on a lumpia wrapper, then roll tightly.
Serve with sweet garlic lumpia sauce.

🥜 Easy Lumpia Ubod Sauce

Mix together:
1 cup water
½ cup brown sugar
2 tbsp soy sauce
2 cloves garlic, minced
1 tbsp cornstarch + 2 tbsp water
¼ cup roasted peanuts, crushed
Boil water, brown sugar, soy sauce, and garlic. Add the cornstarch slurry and stir until thick. Turn off the heat and mix in crushed peanuts.

🥚 Lumpia Egg Wrapper Recipe

This recipe makes about 15–20 thin wrappers, perfect for Lumpiang Ubod or fresh lumpia.

Ingredients
2 large eggs
1 cup all-purpose flour
1½ cups water
½ tsp salt
1 tbsp cooking oil
1 tsp cornstarch (optional, for a more flexible wrapper)

Procedure

In a bowl, whisk the eggs and water together.
Add flour, salt, oil, and cornstarch. Whisk until smooth and lump-free.

Let the batter rest for 15–20 minutes.
Heat a non-stick pan over low to medium-low heat. Lightly grease it.

Pour a small amount of batter and quickly swirl the pan to create a very thin, even layer.

Cook for about 30–45 seconds, until the surface looks set and the edges start lifting.

Carefully peel the wrapper off. Do not brown it.
Stack the wrappers and cover with a clean damp towel to prevent them from drying out.

For Lumpiang Ubod: Make the wrappers slightly larger and very thin so they're easy to roll without tearing.

No-Bake Biscoff Cheesecake
Crust

250 g Lotus Biscoff Cookies (about 32 cookies)
100 g unsalted butter, melted

Filling
1 × 250 g Philadelphia Cream Cheese, softened
2 × 250 ml Nestlé All Purpose Cream (well chilled)
80–100 g Peotraco powdered sugar (adjust to taste)
180–200 g Lotus Biscoff Smooth Spread
1 tsp vanilla extract (optional)
Topping
150 g Lotus Biscoff Smooth Spread, melted
Crushed Biscoff cookies for garnish

Instructions

Make the crust
Crush the Biscoff cookies into fine crumbs.
Mix with melted butter.
Press into an 8-inch springform pan or a 7-inch deep pan.
Chill for 20–30 minutes.

Prepare the filling

Beat the Philadelphia cream cheese until smooth.
Add the powdered sugar and vanilla.
Mix in the Biscoff spread.

In a separate bowl, whip the chilled Nestlé All Purpose Cream until thick and fluffy (soft to medium peaks).
Fold the whipped cream into the cream cheese mixture until well combined.

Assemble
Pour the filling over the chilled crust.
Smooth the top.
Refrigerate for at least 8 hours, preferably overnight.

Decorate
Melt the Biscoff spread for 15–20 seconds in the microwave.
Pour over the cheesecake.
Garnish with crushed or whole Biscoff cookies.

Tips
Chill the Nestlé All Purpose Cream overnight before whipping for the best volume.

If you prefer a firmer cheesecake, dissolve 1 tsp unflavored gelatin in 2 tbsp water, let it bloom, melt it, cool slightly, then mix it into the filling before folding in the whipped cream.

This recipe makes 10–12 slices and has a light, creamy texture with plenty of Biscoff flavor.

Mini Tapioca Pearls:

Ingredients

100 g small sago
1 liter water (or more)
Cold water for rinsing

Instructions

Bring 1 liter of water to a rolling boil.
Add the 100 g small sago and stir immediately to prevent clumping.
Boil for 10–15 minutes, stirring occasionally.

When the pearls are mostly translucent with just a tiny white dot in the center, turn off the heat.

Cover the pot and let the sago sit for 10–15 minutes until fully transparent.

Drain and rinse under cold running water to remove excess starch.

Soak the cooked sago in a little cold water if you're not using it right away to keep the pearls from sticking together.

Storage
Best used the same day.
If storing for a few hours, keep the sago submerged in water at room temperature. For longer storage, refrigerate and use within 24 hours, though the texture will become firmer.

The cooked sago is perfect for grass jelly drinks, milk tea, coconut desserts, or fruit salads.

Brown Sugar Syrup

Ingredients:
1 cup brown sugar (packed)
1 cup water
1 tsp vanilla extract (optional)
1 small pinch of salt (optional, enhances flavor)

Instructions:
Combine the brown sugar and water in a saucepan.
Heat over medium heat, stirring until the sugar completely dissolves.
Bring to a gentle simmer for 3–5 minutes. Don't overcook, or the syrup will become too thick.

Remove from the heat. Stir in the vanilla, if using.
Let cool completely before transferring to a clean bottle or jar.
