This week’s cake! Rhubarb & elderflower!🩷🩷🩷
It was Zena’s bday party this past weekend in Bath, so of course I had to make a cake. She requested a rhubarb & funfetti cake, so I decided to make: vanilla elderflower funfetti cake, rhubarb elderflower compote, elderflower creme diplomat, almond & vanilla crumb, rhubarb & elderflower syrup, and a elderflower mascarpone frosting.
Unfortunately, the sprinkles I used didn’t end up showing in the cake so I topped it with some more sprinkles for that funfetti look along with some poached rhubarb and fresh elderflower. I am SO happy with how this cake came out, both inside and outside. It was light and fluffy, but super moist and flavorful. The tartness of the rhubarb worked so well with the floral elderflower, and it looked so beautiful too!
The scariest part was definitely transporting it from London to Bath in a heatwave but a bit of xantham gum & a cooler bag came to the rescue. The full recipe is on my Substack,
