Harvesting day at one of our partner producers - Hugo, Justino and Emília - in the north of Beira Alta, where the mountain microclimate shapes the terroir and where Cornicabra, Verdeal and Negrinha de Freixo, three indigenous Portuguese varieties from century-old dry-farmed olive trees, take centre stage.

Before the harvest begins, it’s always assessed the degree of ripeness, the change in colour, the firmness of the olive and how easily it detaches from the branch - clear signs that we’ve reached the perfect moment to ensure an extra virgin olive oil with maximum freshness, balance and quality.

The harvest is in full swing - the best time of the year. 🫶🏼🫒

Dia de campanha de um dos nossos parceiros produtores - o Hugo, a Emília e o Justino - no norte da Beira Alta, onde o microclima da serra montanhoso molda o terroir e onde a Cornicabra, a Verdeal e a Negrinha de Freixo, três variedades autóctones portuguesas provenientes de oliveiras de sequeiro centenárias, brilham como protagonistas.

Antes de avançar para a apanha, observa-se sempre o grau de maturação, a mudança de cor, a firmeza da azeitona e a facilidade com que se solta do ramo - sinais de que estamos no ponto perfeito para um azeite virgem extra de máxima frescura, equilíbrio e qualidade.
