Turkish Style Chicken Casserole (Tavuk Güveç/Sote) Recipe

​This recipe is for approximately 4-6 servings, with a prep time of 20 minutes and a cooking time of 45-60 minutes.
​Ingredients
​Chicken and Vegetables
​1 kg boneless chicken thighs or breast (thighs are generally preferred for a softer texture), diced
​2 tablespoons olive oil
​1 large onion, finely chopped
​2 green bell peppers (or sweet pointed peppers), sliced into thick rings
​1 red bell pepper (capia pepper), sliced into thick rings
​3 medium tomatoes, peeled and diced (or 1 can (400g) of diced tomatoes)
​3 cloves of garlic, finely chopped
​Spices and Flavorings
​1 tablespoon tomato paste (use a rich, concentrated Turkish style paste if possible)
​1 teaspoon chili flakes (Pul Biber) (optional, use 1/2 tsp for less heat)
​1 teaspoon dried oregano (Kekik - a must-have in Turkish cooking)
​1/2 teaspoon black pepper
​1 teaspoon salt (adjust to taste)
​1/2 cup hot water (or chicken stock)
​For Serving (Optional)
​A handful of fresh parsley, finely chopped (to sprinkle on top after cooking)
​Grated Kashar cheese or string cheese (Dil Peyniri) (optional, add 5 minutes before the end of baking for a cheesy topping)
​Instructions
​Prepare the Chicken: Rinse the chicken, pat it dry, and cut it into large cubes. Season lightly with half of the salt and black pepper.
​Sauté the Onions: Heat the olive oil in a deep pot or in your earthenware casserole dish if it's stovetop safe. Add the onions and sauté for 3-4 minutes until translucent.
​Add the Chicken: Add the diced chicken and cook over high heat until the meat changes color and is lightly browned.
​Build the Flavor Base: Add the garlic and tomato paste. Sauté for 1 minute until the paste is fragrant.
​Add Vegetables and Spices: Stir in the peppers and the remaining spices (oregano, chili flakes, remaining salt, and black pepper). Mix well.
​Add Tomatoes and Liquid: Add the diced tomatoes and hot water (or stock). Bring the mixture to a boil.
​Baking (Traditional Casserole):
​If you are using an earthenware casserole dish (güveç), transfer the mixture to the dish now.
​Cover the casserole with a lid or aluminum foil and bake in a preheated oven at 180°C (350°F) (fan-assisted) or 200°C (400°F) (conventional) for 45 minutes.
​After 45 minutes, remove the lid/foil and continue baking for another 15-20 minutes until the tomato sauce has thickened and the top is nicely browned.
​Optional: Sprinkle cheese on top 5 minutes before removing it from the oven to let it melt.
​Serve: Remove the casserole from the oven. Sprinkle with freshly chopped parsley and serve hot. This dish is usually served with Turkish rice pilaf (made with butter and orzo/şehriye) or a side of plain Cacık (cucumber yogurt dip).
