Watermelon flesh contains from 5.5 to 13% of easily digestible sugars (glucose, fructose and sucrose). Glucose and fructose predominate by the time of ripening, sucrose is accumulated during watermelon storage. The pulp contains pectins - 0.68%, proteins - 0.7%; calcium - 14 mg/% (mg per 100 g), magnesium - 224 mg/%, sodium - 16 mg/%, potassium - 64 mg/%, phosphorus - 7 mg/%, iron in organic form - 1 mg/%; vitamins - thiamine, riboflavin, niacin, folic acid, carotene - 0.1-0.7 mg/%, ascorbic acid - 0.7-20 mg/%, alkaline substances. Watermelons were brought to Russia from abroad until the second half of the 17th century. The watermelon is native to South Africa (Botswana, Lesotho, Namibia, South Africa: Cape Province, Free State, Gauteng, KwaZulu-Natal, Limpopo, Mpumalanga, North West Province, North Cape Province). The ancestor of the cultivated watermelon was previously thought to be colocynthis (Citrullus colocynthis), but based on genetic studies (DNA from chloroplasts), it has been suggested that the cultivated and wild watermelons are descended from a common ancestor, possibly Citrullus ecirrhosus ("tsamma melon"). Кавун лише на 87% складається з води. Весь інший простір плода займають цукор, вітаміни та мікроелементи. Основними складовими кавуна є вітамін С, вітаміни групи В, вітамін PP та фолієва кислота. Що ж до мікроелементів, те до них можна віднести калій і магній. Відмінна характеристика кавуна вміст лікопену. Ця речовина забезпечує плодам червоне забарвлення - міститься у болгарському перці, помідорах, морквині і тому ж кавуні. Лікопен - потужний антиоксидант.



Медики радять вживати кавун людям із захворюваннями нирок і печінки, а також з серцевою недостатністю і гіпертонією. Кавун гарно справляється з дисбактеріозом, благотворно впливає на процес утворення червоних кров'яних тілець.



Диня містить в собі важливі мікроелементи, до яких можна віднести цинк і кальцій, величезний запас глюкози, а так само вітаміни груп А, С, В і Р. Всі ці корисні складові розчинені у воді, з якої на 95% складається плід.
