Chesapeake Crab Stuffed Mushrooms
Ingredients:
- 16 large white mushrooms, stems removed
- 8 oz lump crab meat, drained and picked over
- 4 oz cream cheese, softened
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 tsp Old Bay seasoning
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
- 2 tbsp olive oil
Steps:
1. Preheat your oven to 375°F. Line a baking sheet with parchment paper.
2. In a large bowl, combine the crab meat, cream cheese, breadcrumbs, Parmesan cheese, mayonnaise, Dijon mustard, Old Bay seasoning, garlic powder, black pepper, and parsley. Mix until well combined.
3. Drizzle the mushroom caps with olive oil and arrange them on the prepared baking sheet.
4. Spoon the crab mixture into each mushroom cap, pressing down slightly to pack it in.
5. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
6. Remove from the oven and let cool slightly before serving.

Tips:
- Make sure to drain the crab meat thoroughly to avoid a watery filling.
- For extra flavor, you can add a dash of hot sauce to the crab mixture.
- These stuffed mushrooms can be assembled ahead of time and baked just before serving.
- Garnish with additional parsley for a fresh touch when serving.
Storage:
Refrigerate leftovers in an airtight container for up to 3 days. Reheat in the oven at 350°F until warmed through. Freezing is not recommended, as it may affect the texture of the crab filling.
