It’s week 2️⃣ of back-to-school and I can already tell I’m gonna need a 4-week lunch menu rotation just to keep myself organized and from standing in the kitchen every morning like 😵‍💫🤔.

Remember when the school announcements actually included the lunch menu?! You knew exactly what your choices were before hitting that cafeteria line.

No apps. No emails. No checking a website. Just the principal, the PA system, and your lunch fate. 📢😅

Well, today is Wednesday, September 2nd, and today’s lunch is:

🥪 Turkey BLT
🥑 Avocado Chips
🍎 Applesauce
🍌 Banana

If you grew up like I did, you already know the real question wasn’t “What’s for lunch?” It was “Did they put enough tater tots on my tray?” 🧐

I can still remember the days of sliding my cafeteria tray down the line, the milk carton sweating on the side, and somebody’s greedy kid yelling, “Move up!” 🙂‍↔️🙄😬

Asian-Style Dirty Cabbage Over Rice 🥡🍲🥢

Listen… this is one of those quick, one-skillet meals that gets the job DONE. 😋

Savory, hearty, flavorful, and easy enough to pull together on a weeknight without making a production out of it. I used ground chicken, but ground turkey or even ground pork would work beautifully here.

Serve it over a bed of rice and you’ve got a simple, satisfying meal that definitely doesn’t disappoint.

Sometimes the best meals are the ones you just throw together and let the flavors do their thing. 👩🏾‍🍳✨

Today I was asked to talk about my passion and how it connects to my career… and if you know me, you already know I was going to bring it back to FOOD. 🌱

Because for me, food isn’t just food. It’s health. It’s culture. It’s connection. It’s community. And sometimes, it’s the easiest way to start a really good conversation.

I work with a population where access to nutritionally dense foods can play an important role in supporting health and medication adherence. So, naturally, I decided the best way to explain my approach to community health was to feed my coworkers. 😂

I made a sweet potato & black bean chili and quinoa cornbread.Both items were plant-based to make sure there was something everyone could enjoy.

And let me just say… THEY ATE.

But beyond the empty serving dishes (which I consider a very successful evaluation), I loved that my team got to experience the connection I see between food and health.

This is why I’m so passionate about this work. I believe healthier communities start with conversations about the things that impact our everyday lives, including what’s on our plates and whether people can actually access the foods that help them thrive.

I’m back to packing school lunch until things get cleaned up out here. 😮‍💨🥪🧃

These days, making a salad at the grocery store requires a full risk assessment. 🧐🥗 When was the last time you had a salad?! Because I’d be lying if I said I didn’t pray a little harder before indulging. 🙏🏾

Add ground beef to the list of food items to avoid. On the same day they are exposed for slaughtering wild horses, there are 300,000 metric tons of “ground beef” headed to the US despite being rejected by China’s food safety commission. Oh, and the beef will be imported tariff-free and sold at 25% below current market prices.
