Have you ever made a dinner on a whim and immediately known it was going into the repeat rotation? 🌮✨

Tonight we tried Creamy White Chicken Enchiladas with cilantro-lime rice and cheesy refried beans — and they were a hit.

I wanted the enchiladas creamy and savory without tasting strongly of sour cream or green chiles, so both stayed quietly in the background while chicken, Monterey Jack, and that warm white sauce did the heavy lifting.

Chris loved them. Even the enchiladas. 😂 So yes…these are officially staying in the rotation.

But then dessert happened.

I had tortillas left over and turned them into Cinnamon-Sugar Tortilla Crisps — buttered, sprinkled generously with cinnamon sugar, and baked until golden. We served them with vanilla ice cream and a drizzle of honey.

SO simple. SO good.

My only mistake? I didn’t have the patience to let the crisps cool long enough to get completely crunchy. 😂 And honestly, next time I may skip the ice cream and just eat a bowl of the crisps with my afternoon coffee.

I especially love finding delicious ways to use something that might otherwise get forgotten in the refrigerator. Old tortillas just earned themselves a permanent second job around here.

Have you ever made a dessert that looks fancy but takes almost no effort? 🍑🍨

Tonight’s sweet finish was warm caramelized peaches with vanilla soft serve, chopped pistachios, and a little drizzle of honey — simple, seasonal, and so good.

I sautéed the peaches in butter with a touch of brown sugar, cinnamon, and salt until they were glossy and just tender, then spooned them over cold vanilla soft serve. The warm peaches melted into the ice cream just enough to make their own little sauce, and the pistachios added the perfect crunch.

Chris loved it too, so this one is officially Allan Approved. 🏆

Sometimes dessert doesn’t need to be a whole baking project. A few good ingredients can still make something that feels really special.

Have you ever put off making something because it looked a little intimidating?

This weekend I finally tackled two recipes that had been on my baking bucket list… homemade Cheese-Its and honey butter rolls!

I’ll be honest—I was a little nervous. There were a few moments of second-guessing (and a few “Finn, is this right?” moments 😄), but that’s the beauty of baking. Every batch teaches you something.

The first batch of Cheese-Its? Next time I’ll roll them just a little thinner. The rolls? I learned so much about shaping, proofing, and trusting the dough.

And then came the most important part…

The taste test! 🤭

Chris quietly snuck a Cheese-It before they had even cooled and declared they were better than the store-bought version. I’d call that a successful baking day!

That’s what I love most about baking. It doesn’t have to be perfect to be delicious. Every loaf, every cracker, every cookie teaches us something new—and sometimes the “imperfect” batches become the family favorites.

💡 Weekend Baking Tip: Don’t let a recipe intimidate you. The first batch isn’t about perfection—it’s about learning. You can always make Version 2, but you’ll never make Version 2 if you don’t bake Version 1.

Has life ever gotten so busy that the cooking kept happening… but the posting didn’t? ❤️

I’ve had a few sweet messages lately asking if everything is okay. It absolutely is! Thank you for checking on me. ❤️ Between settling into our new home and simply enjoying time in the kitchen, social media took a little back seat. But trust me… we’ve still been eating very well!

This Creamy Tuscan Chicken was my way of getting back into the swing of things, and it did not disappoint. Tender chicken, a creamy Parmesan sauce, sun-dried tomatoes, spinach, crispy bacon, roasted broccoli, and cauliflower rice made for one incredibly cozy dinner.

The best review came from Chris. His exact words? “Phenomenal.” Then he smiled and told me, “Your cooking has been extraordinary lately.” ❤️ Needless to say, this one earned an immediate spot in our dinner rotation.

Sometimes the best meals aren’t complicated. They’re just made with a little time, a little love, and shared with the people around your table.

Has dinner ever tried to fight back before you even got it on the table? 😂

Tonight’s Italian dinner almost didn’t happen. About two-thirds of the meatballs were happily rolled and ready to bake when the mixing bowl decided to take a flying leap off the counter. One shattered bowl, a kitchen full of glass, and the rest of the meat mixture headed straight for the trash. 😬

Thankfully, Chris jumped into cleanup mode while I started over, Timmy insisted on supervising from my lap, and somewhere in the middle of it all there was an emergency iced coffee break. ☕🐈

In the end, we refused to let Meatball Gate win.

Dinner turned into homemade Italian meatballs simmered in a rich tomato sauce (with one little splash of bone broth that made all the difference), fresh homemade garlic knots, pasta, and plenty of Parmesan.

Sometimes the best meals aren’t the ones that go perfectly—they’re the ones that remind you that a little patience, a helpful husband, and a sense of humor can still bring everyone to the table.

Tonight, Chris and I both agreed…this recipe is officially a keeper. ❤️🍝

What’s something you’ve always wanted to make but kept telling yourself, “Maybe someday?” 🍞❤️

Today was one of those “maybe someday” moments for me.

I’ve baked bread, English muffins, and biscotti…but I had never made homemade hamburger buns.

I’ll admit, I was a little nervous. Would they rise? Would they be too dense? Would they actually hold up to a juicy burger?

Well…they did all of that and more!

We topped them with Everything Bagel seasoning, and they came out soft, flavorful, and just the right size for tonight’s burgers. Seeing them come out of the oven was one of those moments that reminded me why I love spending time in the kitchen.

The best part?

Chris took one bite and simply said…

“Everything was delicious.”

I’ll happily take that review. ❤️

Sometimes the biggest accomplishment isn’t making a complicated recipe. It’s finally trying something you’ve been putting off and realizing it wasn’t nearly as scary as you imagined.

If you’ve been thinking about baking your own buns, bread, or even trying something completely new in the kitchen, let this be your sign to go for it. You might surprise yourself.
